Indian Salad

Reviewed: Feb. 20, 2013
I served this hot. I sauteed the veggies (fresh) with salt, pepper & curry powder, then added the cooked rice, then stired in reduced fat sour cream and a squeeze of lemon. Left out the fruit. I enjoyed this very much. Thank you for sharing.

Pork Tacos

Reviewed: Feb. 11, 2013
This turned out delicious. I did add taco seasoning mix (recipe on AR) and once the meat was brown, I added 1/2 cup of orange juice (like carnitas) and let it cook off while I prepared the rest of the meal. Also, I used a handful of frozen shredded hash browns for the potatoes.

Mixed Greens and Peppers

Reviewed: Feb. 11, 2013
I've been making green juice, so when I found this recipe, I decided to modify it for juicing. First, I reduced the recipe to half to produce one glass of juice. Omit the oil, salt and sauce. Here goes: kale, rainbow chard, bell pepper, leek. I added 1/2 cucumber, 1/2 red apple, and one jalapeno. The apple & jalapeno produce the sweet & spicy effect.

Dry Ranch Mix

Reviewed: Feb. 9, 2013
No more seasoning packets! I scaled the mix way back to 10. I want to try it out before I make a years supply. That produced about 2 packets worth of seasoning mix. I put half in a season jar and put in in the rack, and with the other half I made ranch dip. Also, I added about a tbsp of dry milk. Thanks!

spinaci con ceci italiano (italian spinach with chickpeas)

Reviewed: Feb. 8, 2013
Ok Allie I will make this dish and let you know how it goes and come back with a real rating. My spinach is defrosting now. /// Progress report: I have prepared this dish and had a few nibbles, then put the rest into the fridge to cool so I can take it to my potluck tonight. By my calculations this is about 150 - 175 calories per serving. Honestly, I didn't expect to like it, because I usually don't like garbanzo beans, and I don't care much for cooked spinach. But, I do have an open mind, and I've learned in life, that I don't always know what I will and won't like. In short: this is very good! /// I did take a pic and will return again to upload it and report about how I like it cold, and what happens at the potluck. /// I let the dish cool for several hours, and then transferred it into a dish to transport. Now this potluck was with a group of 50 +/- of my closest strangers, so no one knew what I had brought. In line I overheard complimentary remarks about the "spinach-n-garbanzo bean..." I had a generous serving myself and it was well received. Thanks you.

Cranberry Apple Green Juice

Reviewed: Feb. 7, 2013
I've been on a green juice adventure, and decided to use your recipe to make a glass of veggie juice. I did have to tweek it just a bit. Raw cranberries, don't peal the apple, green onions, 1/2 lemon, and the spinach (or whatever greens you have). If too tart, add another apple or some grapes. Some day I'll make the salad, but for now, I'm drinking it!

Lean Green Smoothie

Actually I didn't have any honedew melon, so I made this with kiwi fruit. I doubled the broccoli and still couldn't taste it, BTW I used frozen cut broccoli - partially defrosted. Also, I had to add 1/2 C of water. Blenders need some liquid to get the process started. It was good

Vegetable Spoon Bread

Reviewed: Feb. 3, 2013
Superbowl Sunday. I'd been looking for recipes that I could use the pulp left over when I make green juice. This has potential. Here we go. I made the recipe, substituting my green juice pulp for the spinach. My pulp was mostly green with some carrot visable too. I ate this for breakfast with some waldorf salad and a few strips of bacon. I can’t say the the Veggie Spoon Bread really knocked my socks off, but it was good, and went well with the other items. Also, I took a cue from Ms7up and baked longer than directed the bread would set. It is likely that I will make this again.

This green juice tastes mostly of celery. After a few sips, I added a cup of grapes to tone down the celery and sweeten a little more. Very good. Thanks for sharing.

Like this green juice quite a bit, however the lemon was a bit sour, and I added a cup of grapes to sweeten it. Next time I will reduce the lemon.

Green Slime Smoothie

I just made this for my breakfast. It is delicious, and thank you for sharing. I needed to add water and prod it with a spoon a bit before it would blend. I used frozen chopped spinach from the frozen veggie isle of the supermarket - big time saver. Then I also added a handful of powdered milk. Taste = 5 stars! 4 stars because it doesn't blend as is.

These were easy and good. I didn't measure, but I'm sure I used less salsa & cheese. Served with warm corn tortillas, these made delicious fish tacos.

Souper Simple Mac 'n' Cheese

Reviewed: Jan. 19, 2013
I was skeptical but tried it. Mr C & I thought it tasted ok, but my teens both said it was bland. It needs some extra spice or additional flavor. It was a good back up plan for tonight, but I won't be making this often.

Quick and Easy Pizza Crust

Excellent! This is the first time I have ever made homemade pizza (and it's Christmas Eve). I had a little trouble trying to press out the dough with my hands, so next time I think I'll use a rolling pin. Thank you.
