Grilled Salmon with Habanero-Lime Butter

This recipe is amazing! I have been looking to add more fish to my home cooking, but have always been bored by salmon. This sounded interesting b/c we like spicy in my house, and it was perfect! I actually forgot the butter in the fridge when we started eating and the salmon was still good on its own, but then I remembered the butter and WOW! I plan to do what some others have mentioned and make a big batch of butter to use with other things. Really do be careful with the peppers. My fingers are still burning a day later. Thanks for the recipe, Mike Smith!

White Chocolate-Raspberry Cheesecake Bars

I made these for a work bake off last week and won first place! Everyone loved the fruit topping - it made a big difference among all the other chocolate desserts. Very easy to make and delicious. I recommend warming the preserves a bit before spreading them to make it easier to spread -- and definitely letting the cheesecake cool enough before doing that.

Blueberry Zucchini Bread

As Rachael Ray would say, "Yumm-O!" I was anxious to eat this right when it came out of the oven, so I ate it warm last night, and it was delicious, but I just finished eating a piece today for breakfast, and it's even better! Like many others, I healthified it: I halved the recipe and used one regular size loaf pan, used 1/2 cup of applesauce instead of the oil, used 1 cup of sugar and 1 egg. I also didn't have baking powder, but I don't think it made a difference (what is the purpose of baking powder anyway?). I also used 1 1/2 cups of frozen blueberries and it is chock full of them -- delicious! Thanks for the recipe, it's a definite keeper and will probably be made for holiday gifts at the office in mini loaf form.

Butternut Squash Bake

I wasn't sure -- and still am not sure -- if I was supposed to cook or do something with the butternut squash first. It was my first time making it and it was so hard and really difficult to peel. I microwaved it for a few minutes and it was easier, but I still had to bake it for double the time. Maybe I just didn't get a ripe one? How do you know when a butternut squash is ripe? Once it was done, though, it was really delicious. I made it as a side dish and my husband said it could be the whole meal. I used panko breadcrumbs and feta cheese. Delish! Thank you for the recipe.
