As Rachael Ray would say, "Yumm-O!" I was anxious to eat this right when it came out of the oven, so I ate it warm last night, and it was delicious, but I just finished eating a piece today for breakfast, and it's even better! Like many others, I healthified it: I halved the recipe and used one regular size loaf pan, used 1/2 cup of applesauce instead of the oil, used 1 cup of sugar and 1 egg. I also didn't have baking powder, but I don't think it made a difference (what is the purpose of baking powder anyway?). I also used 1 1/2 cups of frozen blueberries and it is chock full of them -- delicious! Thanks for the recipe, it's a definite keeper and will probably be made for holiday gifts at the office in mini loaf form.
