Red Lentil Curry

Great recipe! I didn't have curry paste so I just added some extra curry powder and a little water to make the curry base a little more like a paste than a powder. Served with some brown rice.

This recipe is stupendous- I could have eaten the whole bowl myself. I used light sour cream and light mayo, fresh dill weed (3 TBS), and left out the eggs. SO Delicious!

This was absolutely delicious! Substituted Quorn tenders (chicken-like meat substitute that is phenomenal) for chicken, used vegetable broth instead of chicken broth. Thank you for this recipe!!!

Homemade Black Bean Veggie Burgers

This is a GREAT recipe. It was quick, easy, and so flavorful! I used an extra half cup or so of breadcrumbs to get it to stick together better. We froze the other two and I'm looking forward to seeing how they do when we heat them up.

Tiramisu Cheesecake

YUM!!! I made this for my husband's birthday (his favorite desserts are Tiramisu and Cheesecake) and it was a huge hit. I agree that it doesn't taste all that much like Tiramisu, but the flavor is terrific. Added Vanilla wafers to the lady finges and that was tasty. Thanks for a great recipe.

Restaurant-Style Buffalo Chicken Wings

I changed this recipe to make it veggie friendly. I mixed up the sauce (YUM, so good) and instead of chicken I used Morningstar Farms Chick'n Patties (4) cut into strips. I baked them until crispy, according to package directions, and then tossed them in the sauce. Served with celery and bleu cheese dressing. Very tasty!

I found the consistency of this really spongy and wet. I'm not sure if we were supposed to press it for a longer period of time to get most of the water out, but it wasn't what I expected.

Tofu Sandwich Spread

This was a good recipe. We put the spread in pita pockets with lettuce and mustard. I think next time we'll either add mustard to the recipe, or perhaps Naysoya Dijonayse, which is a bit tangier. Overall the recipe was simple to make and great tasting!

Angie's Dad's Best Cabbage Coleslaw

I loved this recipe, and I love the fact that it keeps for a while too. I changed the ratio to make it for 6 instead of 20. I used a bag of cole claw mix, and added a shreadded carrot, onion, and celery. It was light and tangy. Thank you for the recipe!!!

Vegetarian Tortilla Stew

This is a fantastic recipe. Instead of the green enchilada sauce I used Mexican Red Sauce from my Moosewood Cookbook. Added Quorn tenders chicken substitute, which has a very chicken-like texture, soaks up the flavor well. Easy, tasty, great!

Spinach Enchiladas Verde

Spicy, and very tasty. I used cheddar instead of monterey jack, and it turned out well. The only thing I would recommend is to grease the baking dish. I didn't and even with the layer of enchilada sauce I ended up with everything stuck tight to the bottom, and falling apart when I tried to scoop it out.
