Chewy Peanut Butter Chocolate Chip Cookies

I think this batter needs to be chilled somewhat before baking, or perhaps let sit for a couple of hours. My mixture was very soft and the cookies did spread somewhat. I'd prefer a "chunkier" cookie rather than a flatter one, so if I try this again I'll likely make the batter in advance and let it sit to allow the flour to absorb some of the moisture and/or chill it for a while to stiffen it somewhat.

These definitely need more coconut! I made them as suggested with 3 cups coconut and more flour. I think they could use even more coconut as they are still really meringue-like and didn't come out looking like the picture. Yummy smells and good flavor, however!

Peanut Butter Oatmeal Chocolate Chunk Cookies

Really good - at least on the first day, we'll see how they are tomorrow! I used butter instead of margarine, melted it and stirred in the peanut butter for more chewiness.

Crispy-Chewy Oatmeal Raisin Cookies

These are really tasty cookies! I adjusted the recipe as follows: used 1/2 whole wheat flour and 1/2 all-purpose flour and used 3/4 c Splenda Blend and 1/4 c Splenda Brown Sugar Blend. Also added maybe 1/3 c extra raisins, plumped in hot water. My batch came out really moist - no crumbling at all, very much like a traditional cookie batter. Husband who loves oatmeal raising cookies approves!

Nutty Zucchini Bread

Tasty, but could use more zucchini! I think you could easily double the amount of zucchini and not damage the recipe. I also subbed out 1/2 cup of the AP flour for white whole wheat.

Cherry Chews

Two recommendations - cut the cherries into quarters for better distribution throughout the mix, and reduce the amount of frosting. I think I made my frosting with 3 cups of powdered sugar and there was still too much! I'd make just enough to put a pink drizzle over the top of the bars rather than coating the entire surface.
