It's Chili by George!!

I've been using George's chili recipe for more than 2 years now. (Thanks, George-It's because of you, that "NO ONE makes a better chili" than me!) I started out making it just like the recipe is written and it's absolutely fabulous that way. Then one day, we wanted chili and I didn't have the tomato juice on hand...I replaced it with a can of Rotel's "Chili Fixin's" tomatoes and a large can of Old El Paso Enchilada sauce. It didn't make it better, just more suited to my family's taste. The only other thing is I used Chili Beans for the Pintos. Go no further. Look no where else! This is your new chili recipe. Promise!

Brownie Chocolate Chip Cheesecake

About my 5th attempt at cheesecake & I finally got it right! At the suggestions of other reviewers I: 1) baked the brownie for 25 minutes, 2) placed a dish of water on the second shelf while baking the cheesecake, & 3) when my 50 mins. were up, I turned the oven off, opened the door and let my cheesecake set for 30 minutes gradually cooling down. Cooled and additional 30 min out of the oven & refridgerated. What an awesome birthday breakfast treat for my cheesecake obsessed husband!

Curried Rice Pilaf

Really good! Omitted the nuts, not crazy about crunchy stuff in my rice. Otherwise, followed exactly as written. Nice light but still flavorful side dish. Paired well with Chicken Fried Chicken (from this website--best chicken EVER!)

Cowboy Casserole

Diced up the bacon before frying to make perfect little pieces. Followed the rest of the recipe exactly using "Sweet Baby Ray's" BBQ sauce---the only sauce ANYONE should use. Except I did pour the mixture into a casserole and topped with the biscuits baking according to packaged directions. True cowboy dinner...will def. use this one again!

Albondigas Soup III

Changed this up a bit to make it more "authentic" (according to my 1/8th spanish husband)...just like his grandmaw makes, now. Omitted the pork sausage, used Masa instead of corn meal, chicken broth instead of beef, picante sauce for the salsa and mixed the rice (uncooked) into the meatballs before dropping into our soup. Really liked this one alot....will def. make again! Thank you for the post!

Chicken Suiza Cornbread Bake

Yummm-O! Tweaked it a bit, to spice it up for our tastes: baked chicken seasoned w/chili powder in a foil packet, only used 2T butter to saute, added 1/2 can Rotel to the corn mixture, used 2 reg. eggs; Cooked for 20-30 minutes before topping w/Chicken Souiza (adding a little Colby Jack into the mix to make a little creamier) & more C. Jack then baked for an additional 20-30 minutes. Made what I'm sure was already an excellent recipe PERFECT for my fam!

Garlic Penne Pasta

Awesome pasta recipe! Just looking for somthing to cook with on hand ingredients...this almost fit the bill, so I improvised: sauteed garlic (3 clvs) w/parsley in the evoo, added 1 cn stewed tomatoes, cut (w/the juice), brought to a boil--added spices, simmered a bit then stirred the pasta in a few spoonfuls at a time until it reached a good consistency...was low on the parm, threw in some Mozza. DEE-lish! LOVED the red pepper kick!

Pizza Casserole

I really liked this one! I used my own recipe for homemade spaghetti sauce and rigatoni instead of rotini with more mozzarella than called for. Husband loved it...even better reheated for lunch the day after!
