Husband's Grandmother's Shrimp Gumbo

I have made gumbo twice, both with a roux (browned flour) and I just don't like the taste of roux. This recipe calls for 2/3 cups of flour and 1/2 cup butter, and although the I achieved the great appearance of the gumbo dish, the base tasted like the browned flour. I would try this again, maybe in another month since this is an expensive and labor intensive dish.

Oatmeal Pancakes II

Very tasty! Delicious! I did do things different. I did not have quick cooking oats, so I soaked my old fashioned oats for about 10 minutes in buttermilk while I put all the other dry ingredients together. Came out excellent.

Sweet Potato and Black Bean Chili

I really enjoyed this recipe. I eliminated the jalapeno pepper because it may have made this too spicey for the kids. I also made some pearled barley to serve with on the side and my 6 year old and 4 year old ate it all! I am glad I found this recipe as I am changing my diet to vegetarian and introducing my kids to a whole new way of eating healthy with the extra fiber from the sweet potato, beans and barley.

Soft Oatmeal Cookies

I followed this recipe as is to the end but I added chocolate chips and raisins to my batch and I found these cookies to be way too sweet. There is too much oatmeal in the dough which makes it hard after sitting in the fridge for an hour. A tip if you do still want to try this recipe because of the other thousands of glowing reviews is that you have to mold your dough into small balls right after mixing and BEFORE you let it sit for an hour. Maybe it it will work better for you, but this is one recipe I will not try again.

Key Lime Pie VII

I enjoyed this pie and so did the 3 other adults I cooked it for. The ingredients chilled well together giving it a nice texture. It stored well and didn't have a sweet runny syrup at the bottom of the pan. Will make this again.

Sweet Cinnamon Oatmeal Waffles

I completely enjoyed this recipe but that's because I made one minor adjustment. I didn't have quick cooking oats, so with the old fashioned oats, I soaked the 1 cup oats with 1 cup milk and 1 teaspoon vanilla for about 10 minutes. Then using the rest of the half cup milk, followed the recipe as is. So in other words, the recipe called for 1 1/2 cup milk, the one cup I used soak the oats and the rest was used in the recipe, no more, no less. I used a large round waffle iron and it made 4 large waffles with these ingredients. It was delicious!

I thought this recipe was OK. I followed the recipe to a T and no doubly the waffles were light and looked beautiful. But I found the flavor to be bland. My kids enjoyed it but my husband and I did not.

Best Brownies

These brownies were delicious! I was looking for a brownie recipe to make rum balls so that I didn't have to use boxed brownie mix and they were delicious! I ate about 1/3 of the brownie before I could make them into rum balls! I even made a mistake and left out the vanilla and they still were delicious!

Sweet Potato Cheesecake

I am a cheesecake purist, I love the taste of plain cheesecake, so the feature picture shown for this sweet potato cheesecake is misleading. It shows what looks like a marbled type cheesecake the kind a purist like me would like, pure cheesecake with small swirls of sweet potato, not the full on blended kind like this recipe suggests. As I started to create my cake I realized that there was no way I was going to combine the delicious delicate flavor of cream cheese with the heavy, fleshy sweet potato. So what I did was strain the sweet potato through a strainer (kept the fleshy part for pie) and took the smooth sweet potato, added cinnamon, nutmeg, and white sugar, all to taste, and smoothed it at the bottom of the pan over the crust THEN I put the creamy layer of cream cheese over that (omitted the pecan topping concoction) baked it in a water bath and it came out PERFECT! The best of both worlds without mixing them up. My 4 star rating is for misleading picture and mixing sweet potato with creamcheese. But TOTALLY 5 stars for the cheesecake recipe itself!!! AND, taking a tip from another commenter, rather than using graham cracker crust, next time I will try a biscotti crust. Yum!

Never Fail Biscuits

Tried this for the first time and it came out awesome! They were soft and just like a biscuit taste and texture should be. However, I read one reviewers comment and they suggested using 1 cup buttermilk instead of the 3/4 cup milk, so when I tried buttermilk the second time making these biscuits, I now never make biscuits with plain milk, because they are too easy to crumble. The buttermilk biscuits hold up much better and we use them for morning breakfast biscuits with eggs, chicken apple sausage and maple syrup. Yummy!!! I give this 4 stars for the milk recipe but 5 stars for the buttermilk recipe! This one is for my "pass-down-to-my-kids" recipe box :)

Broccoli Beef I

This was a decent recipe. My husband liked it (and he's extremely picky). The only thing that I changed was that I browned the meat in sesame oil, then added the ingredients as is. It was not the authentic beef and broccoli but it was good.

Easy Paella

I am not sure where to start... First of all, this recipe is not easy in sense of time and effort because it does takes quite a bit of work to put together (and should I mention money), but the recipe is easy to follow. It does not take 30 minute prep time like it suggests or just 5 minutes to cook the chicken (more like 5-8 minutes each side) Second, the rice was a bit spicy with all the red pepper flakes it calls for and I am not sure I liked the flavors of the lemon zest and parsley in the rice or the taste of all the paprika in the chicken marinade. Thirdly, the rice and meat proportions are off. There is far more meat than there was rice. Lastly, this was a good recipe. I don't believe it was authentic paella though. I followed this recipe as stated only changing 2 things; short grain rice for long grain rice and used sliced smoked apple sausage rather than the crumbled chorizo. Oh, and by the way, we spent $20 for a few threads of saffron! Overall, I would recommend this recipe, it was good not great.

Orzo with Parmesan and Basil

I didn't have fresh basal or chicken stock so I used spinach, rather than basal, and vegetable stock, rather than chicken stock and it came out excellent. Great recipe!

Chicken Cordon Bleu II

This was a great recipe! My husband loved it. The 2 things I did change was the ham for turkey bacon (since my husband doesn't eat pork) and I didn't have the boullion granules so I just used Lawry's season salt. It still came out great.
