My cooking triumphs
When I made my first cheesecake. It was a milestone for me. Since never having learned to cook till I was on my own, I was clueless to so much. I kept trying and never being afraid to try something new or complex in cooking. I still don't consider myself a pro, but I am way more comfortable in the kitchen and more willing to cook for others than ever before.
My cooking tragedies
I baked a quiche that was an absolute disaster.

Husband's Grandmother's Shrimp Gumbo
I have made gumbo twice, both with a roux (browned flour) and I just don't like the taste of roux. This recipe calls for 2/3 cups of flour and 1/2 cup butter, and although the I achieved the great appearance of the gumbo dish, the base tasted like the browned flour. I would try this again, maybe in another month since this is an expensive and labor intensive dish.

Oatmeal Pancakes II
Very tasty! Delicious! I did do things different. I did not have quick cooking oats, so I soaked my old fashioned oats for about 10 minutes in buttermilk while I put all the other dry ingredients together. Came out excellent.

Sweet Potato and Black Bean Chili
I really enjoyed this recipe. I eliminated the jalapeno pepper because it may have made this too spicey for the kids. I also made some pearled barley to serve with on the side and my 6 year old and 4 year old ate it all! I am glad I found this recipe as I am changing my diet to vegetarian and introducing my kids to a whole new way of eating healthy with the extra fiber from the sweet potato, beans and barley.
