Beef Stew VI

This was ok. I preseasoned and precooked the meat to sear in some flavor which helped. I found the sauce to be too runny, even though I added the cornstarch. I also found the flavor to be lacking and I did add some red wine to the sauce and the meat was seasoned. I used the precut baby carrots and they were not soft enough after cooking 2 hours and neither were my potatoes, so I don't know if I was supposed to simmer it on a higher temperature than low or what. So after all the 5 star ratings, I was a bit disappointed that it didn't turn out as I expected.

Fluffy Pancakes

My kids loved these! This recipe only makes 8 pancakes, though, so be sure to double it if you have lots of kids like me!

Cajun Chicken Pasta

Good! I had lots of problems with this recipe, the problems being that I didn't have some of the ingredients. So I kind of adjusted and it still turned out great! I had a kick and I didn't use red pepper, but I used a recipe on this site for the cajun spice which might have been a bit hotter than the regular stuff from the store.

Roasted Garlic Lemon Broccoli

I followed the directions to the letter and burnt the broccoli. The seasonings sounded good and the oven I used actually runs at a lower temp, so I don't know what happened except it had black tops.

Grilled Mahi Mahi

I really wanted to like this recipe, there were plenty of good ingredients. The instructions don't really give you a clue as far as what temperature you are supposed to cook the fish whether it be in the oven or on the grill. When we figured out the fish was done, it just seemed so flavorless, like all the ingredients did were sit on top of the fish without seasoning it. We even jazzed it up a bit, using red onion and some red chili peppers, but the fish had no flavor! I was so disappointed!

Balsamic Roasted Red Potatoes

I should have read more reviews and found out about cutting back on the vinegar. The potatoes were crisp and smelled great and then I put the vinegar on them. Then they smelled like vinegar and didn't taste so good. My kids asked me why I put salad dressing on them! So the other seasonings were good, but I would definitely cut back on the vinegar. I'm thinking half the recommended amount at most.

Mushroom Orzo

This is very flavorful and not too tough to make. I did put in extra mushrooms and used chicken bullion like many reviewers suggested. I didn't like the parsley. I know it added some color, but I don't think it was the right flavor to add.

Pork Chops with Chipotle, Onions and Cream

The chipotle seasoning was really good on the pork chops, but I had some problems with the cream sauce. First of all there were the problems making the sauce. I had no idea it would take so long. I thought it boiled and then it was done, but that's not the case. You have to keep stirring and stirring until it thickens. Then after that I thought the sauce didn't have much flavor. It was great and creamy, but I thought it would have fared better with a pasta or something else. Everyone in my house liked the chops, but only 1 person had the sauce.

Garlic Red Potatoes

The flavor on these was good, but we didn't like the lemon. It's not that much, but you can notice it. I didn't know if that was to keep the potatoes looking pretty or what, but we decided that next time it gets left out. You need MUCH more cooking time than listed here if you are going to do it at 350. You could do 50 minutes at 400-425, but not 350. Without the lemon and cooking longer, this would be a great recipe.

Awesome Baked Sea Scallops

Great flavor! I didn't use the parsley or the lemon. I also think you could cut back the breadcrumbs to 3/4 cup. I did use frozen scallops, but I used cold water to defrost and they weren't rubbery at all. I would have liked some indicator of doneness besides the crumbs getting dark. I'm more of a baker, so I need all the help I can get!

Triple Fudge Brownies

Awesome! Rave reviews from my family for this recipe. These are VERY chocolately and moist. If these don't sastify your chocolate craving, there is something wrong with you! As far as the directions go, you really can't whisk in the cake mix very well as the pudding and cake mix gets really thick. You also aren't "pouring" the batter into the pan. The batter is so thick you have to scrape it out of the bowl. Do NOT make these in a 9 x 13 pan as they come out way too thick.

Polish Chicken and Dumplings

The dumplings were a disaster! I followed the recipe. I thought the mix would be stiff, almost like cookie dough, but it was goopy so I kept adding more flour. Then I put them in the broth and even after being in there 10-15 minutes they came out as raw dough goo blobs. Not good. The chicken seasoning was good, though. That's why I gave it 2 stars.

White Chocolate, Chocolate Cookies

I added 1 tsp of vanilla and 1 tsp of salt as recommended by other reviewers and this came out great! My only problem with these cookies is that it is hard to figure out when they are finished cooking. I found 10-12 minutes to be more the range instead of the 8-10 listed in the recipe.

Creamy Guilt-Free Fudge

I used regular sweetened condensed milk instead of the low-fat and put this in an 8x8 pan. It still was too thin and mushy, kind of like putting frosting in the pan. I tried putting it in the refrigerator and that helped some. This was ok, it is chocolate after all, but it lacked the really creamy, rich taste that fudge has and it doesn't get hard. I'll be searching around for another recipe that doesn't have nuts.

Spicy Rapid Roast Chicken

The seasoning kept the chicken from being too bland, but I doubled the amount of seasoning and it still wasn't "spicy". I also did not follow the instructions on cooking. I used The Joy of Cooking's method which did smoke a little towards the end, but nothing like one reviewer said.
