Penne with Spicy Vodka Tomato Cream Sauce

This has become a family favorite! We use 3 sausages and just boil them and slice instead of breaking them up. Then use the same water to boil the noodles. Also, we buy a small can of tomato sauce to help freshen up the leftovers as they can dry out a little. Soooo delicious!

Herb Roasted Pork

I gave it four stars because the herb rub and sauce were awesome and I will totally make it again, but the cook time is way off. I followed the recipe exactly (my loin was 5 1/3 lbs.) and it reached 145 degrees after 1 hour! It put me in a bind as I had company coming and it was done WAY too early. I turned the oven way down to 'warm' and hoped it wouldn't over cook. It did, but not by much. Still edible, but dry. Beware if you have company coming. Use a meat thermometer and keep an eye on it.

Banana Cake VI

I followed the recipe exactly. It's basically banana bread with frosting on it. I like banana bread and I like frosting, so it's not bad. It got better with age.... more moist (I kept it in the fridge). If I were serving for company I would make it 1-3 days ahead of time.

Mulligatawny Soup I

Made exactly as recipe states other than using brown rice. It was delicious! I used a macintosh apple and red onion. My husband has decided it's one of his new favorites. He had 2 servings. By the way, this might be 6 servings if you serve a cup of soup, but it's only 4 bowls of soup. I'll double next time.

Honey Lemon Cookies

I've made these twice now. First time I followed the recipe exactly (using greek yogurt and real lemon juice) and they were delicious. Second time, I tried a few tricks to make things easier and less messy. I put parchment paper down on the cookie sheets and when done baking, let them cool right on the sheet. While cooling, I brushed with the lemon glaze. I slid the parchment and cookies off the sheet and onto the counter and kept on going (made a double batch). Super easy clean up. They turned out great.

Death By Chocolate III

I made this for a New Year's party and everyone loved it! I had to make the pudding twice, because I had forgotten my mother's sage advice of using at least 2% milk or whole when making pudding... otherwise it's too runny and disappointing. Also, I didn't have a trifle bowl, so I used individual plastic "crystal" cups. Worked great.

Basil Tomato Soup

This recipe turned out awesome. My husband and I liked the chunkiness of the soup with the crushed tomatoes. I used half the butter due to other reviews, might even reduce it a bit more next time. I split the recipe in 2 before adding the basil and then added basil to one and dill to the other half. Both were delicious.

Chocolate Meringue Cookies

These were awesome. I think they'd be just as good without the chocolate chips. I had to look up how to get your egg whites whipped into perfect peaks: Make sure your eggs are room temp and add a pinch of salt to the whites before beating. Start off mixing them at medium low speed and then halfway through add the cream of tartar. Next, increase the speed and mix to stiff peaks. Careful not to over mix or it will destabilize.

Harvest Pork Stew

This was good, but you definitely need to put the apples in only for the last 5 minutes, otherwise they are mush. I tried a little after it was done and I could taste the apples. However, when I served it the next day, the apples just took on the taste of the stew. It was good both times, but I liked the apple flavor of the first day better.

Greek Penne and Chicken
