About this Cook
I'm a mom of two who loves baking and preserving. I grew up on an orchard, so every summer Dad spoils me with the fruits of his labor - literally! Ya gotta do something with the overabundance of goodies, so preserving it is! I've made more varieties of jams and jellies than I can remember.

My favorite family cooking traditions
When I was growing up, we always had burritos for a casual dinner when freinds or family were over. I continue that tradition today when we go on camping trips. It's such an easy meal that everyone can contribue ingredients towards, and it always takes me back to my childhood.
My cooking triumphs
I once received an ovation from a roomful of people who were very impressed with my flourless hazelnut cake. What I didn't tell them was that it took me almost the entire day to make! Then there was the time I made a full-on Italian dinner for my daughter's entire swim team: Mac and cheese, lasagna, fettucine, spaghetti, salad, garlic bread . . . I know there was more that I'm not remembering.
My cooking tragedies
The Italian Bowknot cookies from this site. They were so bad I had to throw them away. Not sure if that was me or the recipe . . . .

Wedding Cake Frosting
Really good frosting. I halved the recipe, which was exactly the amount I needed for 20 cupcakes. I used it for the "Sweetheart Cupcakes" (from this site), piping it on in a big swirl. I followed others' advice about beating the butter and shortening for approximately 20 minutes. Others have said how sweet this frosting is - and boy, is it ever sweet - but in my opinion, that's what frosting is. I didn't use the clear extract, and the frosting still came out very white. I will definitely use this again as it was so easy to make and work with.

Sweetheart Cupcakes
These cupcakes are so cute, fun and very easy to make. I couldn't find the flavored oil at any of my local grocery or craft stores, so following other reviewers' advice, I just added cherry flavored extract. What a waste: you couldn't even tell it was there. And I added a lot! I used a pastry bag and tip to make sure I got the colored batter all the way to the bottom. I iced them with "Wedding Cake Frosting" from this site using the colored swirl technique that Celeste described. They came out looking like they came straight from the bakery. Beautiful!

Overnight Berry Coffee Cake
I would have liked to give this more stars, because the flavor is really good. I made the recipe as written, but added half again the amount of topping. It came out of the oven looking completely ridiculous. About 95% of the nuts sunk into the cake, so I ended up with a nut here and a nut there. It totally made me look like I don't know how to bake! Not sure what I did wrong since I followed the steps exactly. . . .
