Spicy Sausage and Rice Casserole

I used 16oz of sausage, and was concerned that the rice would overtake the sausage, but it was a perfect balance. DEFINITELY add more chicken broth. I think 2 cups is a more reasonable measure. I used spicy sausage, about a tsp of chili powder, no black pepper or cayenne, and it was perfectly spiced to my taste.

Best Spanish Rice

Mexican Casserole

This is really good... I would give my doctored version five stars. I diced an onion and sautéed for a few mins in some olive oil, then added some chili powder and a bit of black pepper. Then I threw in the diced chicken and cooked until done. From there, I essentially followed the recipe, but I used a 12 oz can of corn and probably more like a full cup of salsa. I also made some spanish style rice and put that in the bottom of the casserole dish. Yum!

Cherry Almond Coffeecake

I will definitely make this again. I did find it to be quite cakey, but still good. Next time, I will bake with a bit of sweetened cream cheese on top as well... And maybe a bit more fruit.

Salisbury Steak

We absolutely loved this. I can see it going into regular rotation at our house. Next time, I will definitely double the sauce. I found myself scraping the cooled frying pan with my finger as I was packaging up the leftovers. :)
