Honey Baked Chicken II

Reviewed: Nov. 25, 2013
I made with chicken thighs. I basted numerous times with the juice which made a nice glaze on the chicken. I liked it a lot, husband said it was ok. It had an indian food flavor

Cathy's Banana Bread

Reviewed: Nov. 25, 2013
Really moist and good! I did add a little nutmeg and cinnamon for more flavor. I used 2 medium sized bananas so I think it was probably 1 and 1/2 cups.

Amazing Artichoke and Spinach Dip

Reviewed: Jul. 15, 2013
pretty good. I used only mayo and not quite as much as it called for. I put it in a little slow cooker to heat it slowly and then it kept warm during a party.

simple enough for my 13 year old to make and very good and moist. Didn't add any glaze which it didn't need.

Savory Chicken Breasts

Reviewed: Dec. 26, 2012
SO easy to make and my family loves this one. I've made it with other cheeses besides swiss and it's good that way too, but I would say swiss is the best. I make this at least a couple times a month. Thank you for the easy and delicious recipe that has become a go to meal in our house.

Surprise Meringue Kisses

Reviewed: Dec. 23, 2012
Use an electric beater and beat on high for a LONG TIME to get stiff enough! I had to go through 2 batches of this before I got it right for them to be "stiff" enough. I had to beat the egg whites with my kitchenaid mixer for about 10 minutes on high for them to get to a soft peak. Then I had to beat the cup of sugar for at least another 10 minutes on high speed for the batter to get to consistency that was firm enough. It is right when it is the consistency of cool whip. I did not use the peppermint extract. I put Hershey's CHERRY kisses in the center of these and then used a knive to cover the kiss with enough batter. I sprinkled some with red sugars, and others I swirled a toothpick dipped in red food coloring to give it a candy cane effect. They are beautiful and taste awesome! The only reason I didn't give full stars is cause I had such trouble figuring this recipe out and wish I would have known it could take so long to get firm using a heavy duty electric mixer.

Roasted Butternut Squash and Garlic Lasagna

Reviewed: Sep. 19, 2012
I made this the way the recipe called except for two things. i added finely chopped vidalia onion and I used the regular boiled lasagna noodles. It was good, but time consuming and it was missing something. I think some herbs or something else I can't quite put my finger on. Definitely add the onion. It would have been extremely bland without that. I will be making again but with more flavoring.

Zucchini-Chocolate Chip Muffins

Reviewed: Sep. 15, 2012
these are amazing! I doubled the batch to make 24. I had a huge zucchini from my garden that I peeled the skin off of and then used a peeler to make strips and then diced that. I didn't use walnuts and don't miss them. These are AWESOME! My kids love em too.

Fluff Dip for Fruit

Reviewed: Jul. 5, 2012
very light and fluffy...great with strawberries and pineapple. Not so good with watermelon or any melon. I would hold off on alittle of the amarreto. It's a smidget strong! You can 1/2 this recipe if your making just enough for a fruit platter. But I made it all and froze half to use later. It froze fine! I also used 1 pckg. vanilla pudding, 1pckg. french vanilla pudding. The french vanilla gave it a rich flavor.

Black Bean and Corn Quesadillas

Reviewed: Jul. 3, 2012
I'm a vegetarian, but my husband and kids aren't. It's hard to find meatless recipes they like, but they LOVED this. It's very filling too. I made 2 big quesadillas for 4 people (had leftover bean/corn mix). I didn't use pepper flakes, but DID USE fresh squeezed lime and cilantro.

Classic Creamy Coleslaw

Reviewed: Jun. 19, 2012
I used a bag mix with the dressing from this recipe. After I made the dressing and mixed it with the cabbage it seemed like not enough dressing coating it. But after letting it sit in the fridge overnight it became very watery with dressing. it was REALLY good though! I had to drain some of the liquid off but it was still nice and creamy.

Bacon Wrapped Chicken

Reviewed: Dec. 20, 2011
pretty good, but definitely precook the bacon before wrapping, not till it's hard and crumbly, but enough. This pairs really well with a mashed potato recipe you can use the left over bacon with. Fry diced onion in bacon grease, make mashed potatoes mix in fried onions, crumbled bacon, and cheese. Yum!
