Refried Beans Without the Refry
I really liked this recipe- although I made some changes. I used 2 upsc pinto beans and 1 cup red beans, 5 cloves of garlic, 2 tsp salt and 4 chicken buillon cubes in water (4 cups) + 5 cups water. I also added 1 tsp cumin and some red pepper flakes and some chili powder. They came out tasting a lot like Old El Paso refried beans, only with more of a kick. I am definitely going to start making my own from now on. It seems more healthy, organic- and flavorful that way!

Oatmeal Pudding Cookies
A little bit crumbly- I would probably cut back on the oats next time. But they are very tasty. I added nuts and they were wonderful!

Pineapple Pecan Pie
This pie was FANTASTIC!!The pineapple was a great twist on the traditional pecan pie. I added about 3/4 cup of pineapple- but next time I would cook it a bit longer, and make sure I drain the pineapple VERY WELL. I just drained it in the can this time, and it came out a bit runny in the middle. Everyone ate it anyway because it tasted wonderful- and I already have requests to make it for Thanksgiving!
