Paleo Pancakes

So far this is the best Paleo pancake recipe that I have tried. I used coconut oil versus vegetable oil, but everything else was exactly as listed in the recipe. I really liked the pumpkin and spice flavor. The texture is not like a traditional pancake, but it is still OK. I will make these again.

Easy Meatloaf

This is literally the perfect basic meatloaf. The glaze is delicious. You can jazz this up with a TBSP of Worcestshire sauce, but I have made it without and it tastes just fine. I also often buy meatloaf mix (beef/veal/pork) rather than just ground beef and that tastes fine too. This is great for dinner and great on sandwiches the next day.

Pasta e Fagioli I

This is a delicious way to use leftover ham. I used 2 C chicken stock and 2 C beef stock instead of all beef stock. My only issue was with soaking the beans. I have never cooked with dried bean so I wasn't sure about the appropriate amount of time. Eight hours soaking was enough, next time I will try overnight or I will used canned beans. Otherwise, I loved this soup. I will make again.

Pecan Pie Muffins

These are pretty good, but not awesome. I used regular-sized muffin tins and greased with butter. There was no problem with sticking. I think I was expecting more of the gooiness that you get with pecan pie. Next time I will lower the oven temp as one poster suggested and reduce the cooking time to 15 minutes.

Turkey Bean Chili

This is an excellent hearty chili recipe. It makes a lot, so use a big stockpot. I made a couple of changes based on what I had in my pantry. Rather than using 4 cans of stewed tomatoes, I went with 2 28 oz. cans of whole tomatoes and broke (or squished) the tomatoes into the chili so the pieces would be smaller. I also did not have any cumin, so I tripled the chili powder. Finally, I added a couple of dashes of hot sauce to make it extra spicy. My family loved this and I will make it again.

The Original Potato Salad with Real Mayonnaise

Excellent basic recipe. I used the exact recipe provided here. It tastes almost like I remember, but maybe a bit too sweet. In the future, I will add less sugar and a bit of dill pickle juice.

Walnut Pear Coffee Cake

I am not quite sure what I did wrong, but it took a lot longer than 55 minutes to cook this. My oven is calibrated correctly (I bake a LOT) and I used a 9-inch springform pan. It still ended up baking this about 75 minutes. When the cake was done, it tasted good and was moist, but it was still a bit too squishy in the very center. Maybe the pears I used were too big and juicy? Anyway, this does taste good and I recommend it, expecially if you are looking to bake with pears. Just make sure to check the middle with a toothpick before you finish baking.

Banana Crumb Muffins

These are easily the best muffins I have ever made. I followed the recipe exactly. Since I had a 12-cup muffin pan, I used all 12 cups. There was just the right amount of batter and streusal for reasonable portions. Wonderful.

Apple Pie by Grandma Ople

This is by far the best apple pie I have ever made. I have made it twice so far, both times I added cinnamon to the apples as suggested by other reviewers. Also, as mentioned by others, I think the lattice crust is a must as you want to be able to easily pour the sauce into the apples as well as coat the crust. This pie will drip, so place a pan on the bottom shelf of your oven. Get ready for the compliments.
