Bacon Wrapped Dates Stuffed with Blue Cheese

I read all of the reviews before making this recipe and decided to try all recommended variations because it is such an easy recipe. I have to say, either way you go, any variation is delicious: blue cheese, ricotta, gorgonzola, adding brown sugar, wine reduction and almonds. BUT...I think my favorite is the bacon rolled in brown sugar, stuffed with smoked almonds and blue cheese with a wine reduction. It is much tastier with the brown sugar, believe me! I think my second favoriate was the dates stuffed with ricotta. But regardless of the cheese you use - you can't go wrong, I would definitely add almonds to the mix, as the crunch is very nice. Enjoy!

Microwave Spiced Nuts

I made this recipe the other night. Very quick. simple and delicious! I definitely recommend roasting the nuts in the oven per previous reviews for 8 or so minutes and doubling the cinnamon. I forgot to add cayenne pepper, but bet that would've indeed given it a very nice kick...will definitely add next time.

Crab Tartlets

I made these last night for some family. It is indeed the simplest recipe ever, requires almost no prep, and they turned out great. Per other reviews, I added cayenne, garlic powder, artichoke hearts and baby shrimp, and do recommend this for extra flavor/color. I would definitely make this again and it was well received by everyone. I bought the frozen phyllo tart shells at Whole Foods.

Roasted Garlic Mashed Potatoes

I just made this recipe for my husband and I tonight to acommpany our main chicken dish. I doubled the garlic as several others had recommended and also reduced the amount of milk just slightly; I used fatfree milk which was fine. While the overall taste was good -not amazing, I would probably suggest tripling the amount of garlic. It just didn't have enough garlic flavor which surprised me. We also love garlic. I would make it again but with more garlic!

Asian Salmon

I made this recipe last night for my husband and in-laws. It was absolutely delicious. I followed the advice of several others. For starters, I doubled the marinade which is a "must" and added a dash of cornstarch to thicken the marinade at the end for pour back over salmon! I added ginger to the marinade- delicious. I baked for 15 minutes skinside down, then broiled skin side up for 5 or so minutes. It was perfect! 30 minutes is way too long to bake. I served the salmon over Whole Grain Brown Rice by Lundberg Jubilee(from Whole Foods). I also cooked a quick/delicious mixed vegetable dish (Fire Roasted Vegetables from Trader Joes) and placed the veggies on top of the rice and on sides of the salmon. I also decorated each plate with spinach leaves drizzled with olive oil and rice vinegar. The overall presentation looked quite tasty and the mixture of rice, veggies and salmon indeed tasted wonderful. If you are cooking for four, I strongly recommend atleast 1 1/4 lb of salmon. I look forward to making this delicious dish again and it was a huge hit with the family. Enjoy!

Spring Strawberry Spinach Salad

I made this salad last night. It was quite tasty but I did feel it was missing just a little something though. I think if you added glazed walnuts and/or a light seasoned feta or gorgonzola cheese it would taste phenomenal!! I will make it again for sure andadd nuts/cheese.

Ginger Glazed Chicken with Pineapple Salsa

I just cooked this last night for my husband and I. It was delicious. I followed advice from former reviews: used more Pineapple (approx. 12 ounces) and less Sesame Oil (only 3 tspns), but the same amount of cilantro and it came out WONDERFUL! I marinated the chicken for 24 hours and cooked it on top of the stove which was just fine. The pineapple salsa is so delicious, you want to smother each bite of chicken with the pineapple salsa. I also cooked Spanish rice and that complimented each bite even more. It was truly delicious. I would highly recommend a rice side with this dish. If I were to change anything, I would make more pineapple salsa, atleast 3 servings (for dinner for two). I can't wait to make it again!
