About this Cook
I come from a cooking background. My father is a chef and my step-father owned a delicatessen. I work for a international food service company.
My favorite things to cook
Anything that does not involve kneading dough. I am no good at that. Always comes out too tough.
My favorite family cooking traditions
I come from an Irish family.
My cooking triumphs
My homemade spaghetti sauce. It is always a hit.
My cooking tragedies
When I was younger I made a seafood stew and all the mussels didn't open. Not knowing any better at that age, I pried them apart and ended up giving my family a slight case of food poisoning.

Roast Sticky Chicken-Rotisserie Style
This is a fantastic recipe and a regular for roast chicken in our house. Only things I do differently is to make a paste of butter and the seasonings and stuff this under the skin of the breasts. I also wrap and marinate it overnight after rubbing the outer skin with the seasoning. I suggest to remove the chicken at about 155-160 degrees, heat the oven to 375, and put the chicken back in the oven. Pour a little water into the bottom of the pan before putting back into the oven and the high heat will help the steam brown and crisp the skin. Remove at 170 degrees and let the bird rest. Delicious!

Banana Crumb Muffins
These are delicious! I added an extra banana and used 1/2c sugar & 1/4c brown sugar. They turned out extremely moist and fluffy.

Exquisite Pizza Sauce
This is a delicious sauce! The only change I make is to omit the honey. This has become my new stand by for pizza sauce. Thanks so much for posting.
