Easy OREO Truffles

I absolutely love these - but a warning, unless you love chocolate you might not feel the same way. I've taken them to a party and people either LOVED them or thought it was way too much chocolate. Also, if you drizzle white chocolate on them it is easier to melt the chocolate and then put them in a ziploc bag with a tiny end cut off - it makes it so much easier and nicer. I colored the white chocolate red/green to make them more festive. Will make again and again!!

Creole Black-Eyed Peas and Rice

My husband thought this recipe was okay, but I didn't like it. I used 2 T of seasoning and Bush's canned peas. It was too salty - I would recommend using 1T of seasoning and adding cayenne pepper to increase flavor and decrease salt.

Mexican Rice III

I really enjoyed this rice and I'm not a fan of Mexican rice. The flavor was great although I doubled the jalapeno peppers. Super easy and much better than boxed rices!

Creamy Tomato Soup

This soup was really great, but I wouldn't say it was "the Best." I think the ease of the recipe may contribute to the higher ratings. I did use fresh garlic instead of the powder, I also didn't put the tomatoes in the processer as others recommended which I think may also add to the recipe. I will still make again, but not often.

Boilermaker Tailgate Chili

This chili is awesome!! I omitted the bacon bits and sausage due to cholesterol, but it still had a great kick. I thought it was quite spicy while my husband thought it was perfect (we're both from New Orleans). It was the first 5 my husband gave me so this will definitely be a keeper!!

Beef Stroganoff III

This was my first attempt at Beef Stroganoff and it was awesome! I did omit the white wine and mushrooms (due to our preferences) and then doubled the beef soup, flour and sour cream. This provided a perfect amount of sauce for my husband, me and leftovers. I will definitely make again!

Stack of Onion Rings

These onion rings were awesome!! So easy to make and so tasty. I didn't give them five stars because they felt like they were missing something in flavor, but I couldn't put my finger on it (my husband said they were a 4.25 rating).

Refried Beans Without the Refry

The beans were great but not "the Best." They definitely need more seasoning - i would use the whole jalapeno, onion, and more garlic. I would also cut the salt down to 2 tsp. I used almost 4 and it was way too much as others stated.

Creole Butter Beans

These were great, but not what I was expecting. Being from New Orleans, I was expecting our Butter Beans that have a thick consistency (like Red Beans and Rice). These still tasted great and I served them over rice (made three servings considering my husband eats large portions). I will make again, but I am still on the hunt for a butter beans/rice recipe.

Easy Slow Cooker French Dip

YUMMY!! I used a 1.5 pd roast and let it cook for 2.25 hrs. I wish I had time to cook it a little longer as it still had the slightest, tiniest beer taste (I hate beer) but I think another half an hour would have been perfect.

Chicken Tortilla Soup V

This is a great Tortilla soup!!! I will definitely be making again. I added some black beans for consistency and it was so yummy. I also shredded the chicken, added it back in, and let it simmer another 15 minutes to absorb the flavor. Perfect!

Jenn's Out Of This World Spaghetti and Meatballs

Please follow others advice and cut the sugar in half! I didn't and our spaghetti was SUPER sweet although we still loved it. Overall it is very easy to make and tasted great. My meatballs weren't as crumbly as others stated, maybe I overcooked them?

Colombian Stewed Flank

I must admit that I didn't have beef boullion (the store was out) so I tried to substitute with beef broth and it didn't work out. I'm not sure if this was the only reason we weren't huge fans, but my husband and I felt like it was missing something. It definitely needed more flavoring, I will try to add more if I make this again.

Corn Dip II

This dip is great!! I took it to a party and everyone loved it. It was one of the first times where there was not a scoop left of the dip I brought. I even had a few people ask me for the recipe. I liked it cold, my husband liked it hot. I heated it at the party in a glass dish and let it sit there - even after it cooled people were digging in.

Downeast Maine Pumpkin Bread

This is the first bread that I made and it came out perfect!! I can't keep my hands off of it. It is extremely moist - I made 2/3 the recipe and baked for 70 min. I used canola oil instead of veg oil and 1/3 brown sugar (2/3 white) since I ran out of sugar. This recipe is perfect!!

Brown Sugar Meatloaf

I'm not a big meatloaf fan but my husband is so I make it to please him every now and then. I must say, this was the best meatloaf I have ever made. I've made at least a half dozen recipes and my husband agreed that this was the best. I don't mind meatloaf so much anymore (although I will never love it) and will make it more often. Goes great with garlic mashed potatoes.
