Potato Minestrone

Five stars for easy to prepare and great taste! I added one can of Rotel tomatoes and 1/2 tsp of red pepper because we like spice. Used the whole box of spinach. Cooked it overnight and let it sit all day; flavors had blended well by dinnertime.

Peanut Butter Vegetable Chicken Soup

Made it almost exactly according to directions; a light and very tasty soup. Could be a little spicier for our taste; will probably add red pepper next time. The peanut butter gives an interesting flavor; I'd be interested in making it w/o peanut butter to see how it compares. Also, I made some stir fry with the veggies I had left over. Next time I'll plan to do that in advance so I'll have TWO dishes from one effort!

Honey Chicken Stir-Fry

Perhaps a 3 1/2? Maybe I did something wrong but mine came out without a strong flavor and not too different than other stir-fry's that I've tried. Of course, I used my own broccoli mixture (broccoli, carrots, sugar snap peas, onion)...and it was the first time I've ever used cornstarch.

Wonderful Chicken Curry Salad

I used someone else' suggestion and only added 1/2 cup of mayo even tho the recipe calls for a full cup. It was perfect and my husband thought it was "delicious." Next time I will add a little more chicken and more grapes. This will become part of my regular rotation!

Winter Chicken Bake

The cranberries were a little tart for me, although my husband liked it. He also added some barbecue sauce to his chicken. Next time, I will add BBQ sauce and nix the cranberries.

I must agree with everyone else: this is wonderful! With every bowl, I like it more! I added an additional can of chicken broth and a pound of ground turkey; I also used 3 tbsp of Italian seasoning since I did not have basil. It turned out great..although I look fwd to making it acc to the recipe so I can see if that makes any difference.

Sweet Potato Biscuits

These were much easier to make than I thought they would be! I substituted butter for the shortening, as others suggested. Indeed, honey and butter make these heavenly. Our dinner guests were very pleased!

Turkey Tortilla Soup

Like others, I modified this recipe a bit (even though I know it's best to prepare acc to directions the first time). I added sauteed onion and doubled the chicken broth and enchilada sauces. I added 2 cans of Rotel tomatoes and a can each of black beans and shoepeg corn. I, too, used 1% milk instead of half and half. My husband really likes this soup, though it's more stew-like in consistency. Next time I'll add less tortillas and one can of diced tomatoes and a single can of Rotel tomatoes. So that means that I'm definitely preparing it again...probably next Thanksgiving! :)

Awesome Roast Beef

Okay on the first try, but on the 2nd try I added an onion and baby carrots, and substituted another can of beef broth for the cream of mushroom soup. This suited my family better, and made a delicious broth base for the gravy.

Easy to make and a nice side dish for veggie soup or beef stew. Thought it would be too much onion, but a small to medium onion is just right!

Ham Bone Soup

This was the weakest recipe I've tried yet from this site. Maybe I used too much onion, maybe I didn't cook it long enough. I won't probably won't try it again. (Although I used a honey-baked ham...which might have something to do with it...)

New Year's Day Black-Eyed Peas

This was my first time to cook black-eyed peas, and my husband (who doesn't like black-eyed peas) loved it! I added two cans of un-pureed Rotel tomatoes for spice. I'll cook this again...and not just on New Year's Day!

Fabulous Fried Cabbage

This was my first time to cook cabbage, and this recipe was easy to follow. I agree with the others that this is not "fried" but steamed cabbage. Next time I will use less broth for a crisper, more stir-fried taste/texture.

Roasted Sweet Potatoes & Onions

I didn't have amaretto, so I used 3 tbsp (or so) of brown sugar and tossed with onion and sweet potatoes in large bowl. Next time I will use less onion. But overall my family loved it!
