Andie's Stuffed Mushrooms

I made this before and this time I made a couple changes. I added 1/2 cup of water to the stuffing mixture because last time it was too dry. I also bought 3 pounds of mushrooms (but only used stems from 2 pounds of the mushrooms). It turned out to be the perfect amount of stuffing! I will definitately be making this again. My friends once again raved over this recipe.

Arti-Cheesy Chicken

This recipe was amazing! Its not the healthiest of recipes but it tasted wonderful and my friends and I all agreed that it desevered 5 stars. I made only a couple slight changes: I cooked the chicken breasts in olive oil with Italian seasoning before cutting into pieces. I used herb and garlic feta cheese and sliced olives. The name of the recipe really should be Arti-Cheesy Chicken Pasta as the Penne pasta is not listed in the ingredients and should be. I used approximately 20oz. of Penne pasta. One of my friends recommend that I double the garlic next time. Serve with a side of green salad topped with balsamic vinaigrette.

Strawberry Tiramisu for Two

I made this for Valentine's Day dinner as suggested by the Allrecipes Newsletter. Even though the recipe can be hard to follow, I enjoyed it very much. The flavor was amazing and the presentation alone looks beautiful. There may be a problem with the number of strawberries called for in the puree, but still having enough remaining for the layering / garnish. I recommend setting aside 5 or 6 strawberries to use in the layering / garnish and using the rest for the puree. I highly recommend this recipe and look forward to making it for guests in the future.

Salmon with Brown Sugar and Bourbon Glaze

Absolutely wonderful. I followed the recipe exactly and it turned out perfect. I'm not sure why the previous reviewers experienced burned food, I had no problems. Just in case though, be sure not to use too much heat. Good luck!

Garlic Cheese Chicken Rollups

I found this recipe to be absolutely amazing! I followed the recipe exactly, but with my own cheese spread. I added together a package of cream cheese, dry chives, minced garlic, garlic powder and onion powder and blended it in the food processor until wonderfully whipped. This is one of the best new recipes I've made in weeks. I highly recommend everyone try this at least once!

Garlic Mashed Potatoes Secret Recipe

A unique and exciting flavor. The preparation was easy and didn't take long at all. I made it for my friends and they were all trying to figure out what the extra kick was, it was the Oregano. It goes nicely in these potatoes. I made a couple of minor changes: I added a 1/4 cup of sliced garlic cloves when there was 5 minutes left to boil, this helps soften them up. If you are scaling this recipe down to 10 servings I recommend boiling for only 35-40 minutes. Enjoy... (It's very good!)

Garlic and Onion Burgers

These turned out great! I served them with swiss cheese, grilled onions and mushrooms on top. I also added 1 teaspoon of Aleppo Pepper & 1 teaspoon seasoning salt. To help the patties stay together I used 1/2 cup of oatmeal and 1 egg.

Mary's Roasted Red Pepper Dip

My friends and I really enjoyed this dip. Based on previous reviews I made a few changes: used 2 tablespoons of dry minced onions, used 4 cloves cloves of minced garlic, used 2 cups of shredded monterey jack / colby jack cheese and added a half cup of shredded parmesan cheese. I prepared the dip in two Pyrex 5 X 7" dishes and cooked them approximately 25 minutes. I plan on making this for many upcoming parties.

Sweet and Sour Meatloaf

This is great! I've made it many, many times. My roommate and I both enjoy this at least once a month. I've made a few changes though: I use 3 teaspoons of dried minced onions, add 3 teaspoons of minched garlic and add a 1/2 cup of finely shredded cheddar cheese. Suggestions: When making the sauce add the mustard as the next ingredient after the tomatoe sauce. This will ensure it gets mixed in well. Prior to pouring the sauce over the top of the meatloaf be sure to drain out the fat. I love this recipe, it is wonderful!

Banana Banana Bread

Yum, yum, yum. I enjoyed this a lot. It was super moist and sooo easy. I only made a few changes based upon previous reviewers suggestions. I added 1 teaspoon of cinnamon, added 1 teaspoon of allspice and added 1/2 cup of chopped walnuts. I used approx. 6 bananas and it was perfect. Towards the end of the baking time it might be a good idea to cover the top with foil.

California Chicken Spaghetti

This was a wonderful dish! I highly recommend this pasta and it is in my regular rotation. I prepare it with the following changes: use a 15 oz. can of diced basil seasoned tomatoes (not drained) instead of the fresh tomatoes, use the entire package of basil feta cheese, stir approx. 5 oz. of shredded asiago cheese into the pasta prior to mixing with chicken. DO NOT CUT THE PASTA IN HALF as other reviewers have suggested. This spaghetti isn't super saucy and liquidy like many Americans expect and that could be why people suggested using less pasta. The asiago cheese adds texture and flavor to the pasta. If you use the amount of pasta called for, this meal will go a long way. Enjoy!

French Dip Sandwiches

Absolutely wonderful! I have made this many, many times and my guests always rave about it. I use sodium reduced soy sauce based upon previous reviews. I serve it using two 6-packs of hoagies and cut each sandwich in half to make 24 mini-sandwiches. On each mini-sandwich I layer the meat and then top with a slice of provalone. Thanks for the great recipe!

Awesome Bow Tie Pasta

My roommate and I LOVED this pasta salad. I made a few changes to the recipe. As suggested by other reviewers I used a 16 oz. can of diced tomatoes instead of fresh and I added two tablespoons of dried oregano plus two tablespoons of dried basil. I used basil and tomato feta cheese. It turned out amazing! Don't forget to add a touch of salt. If you enjoy Feta cheese and Balsamic Vinegar then you will love this tricky concoction. Very unique recipe.

Tomato and Basil Quiche

Amazing! I only made a couple changes to the recipe. I used 2 cups of cheese (amount came in package) and after the quiche was in the oven for 10 minutes I sprinkled nutmeg on the top. The flavor was great and I enjoyed everything about this recipe. My only suggestion is to add some more olive oil prior to sauteeing the tomatoes because they tended to stick to the pan. Great recipe and highly recommended.

Baby Spinach Salad with Tomato and Mozzarella

I absolutely love this salad. Think of it as Caprese Salad with a twist. The only change I make is to halve a pint of either cherry tomatoes or grape tomatoes instead of the beefsteaks. They have far more flavor and really add to the presentation. I also use more olive oil and vinegar than is called for. Be sure to only use fresh herbs and a more expensive aged balsamic. The last time I took this to a potluck this salad received wonderful reviews!

Steak and Spinach Salad

This is VERY, VERY good. It is easy to make and I have made it many times for parties and holiday events. I season the steak with a seasoning salt as it cooks. I also add 1/2 cup Gorgonzola cheese and I use halved cherry tomatoes instead of sliced tomatoes. I use the following for the dressing (can be found on this site): "Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette". I highly recommend this salad to everyone!
