Sweet and Sour Meatloaf

Reviewed: Oct. 1, 2004
This is great! I've made it many, many times. My roommate and I both enjoy this at least once a month. I've made a few changes though: I use 3 teaspoons of dried minced onions, add 3 teaspoons of minched garlic and add a 1/2 cup of finely shredded cheddar cheese. Suggestions: When making the sauce add the mustard as the next ingredient after the tomatoe sauce. This will ensure it gets mixed in well. Prior to pouring the sauce over the top of the meatloaf be sure to drain out the fat. I love this recipe, it is wonderful!

Chicken Enchiladas I

Reviewed: Oct. 1, 2004
It was good. I recommend this recipe in conjunction with CRISCO(R) Chicken Enchiladas. Use the sauce from the other recipe and follow everything else in this recipe.

Basil Pesto Sunshine Sandwich

Reviewed: Sep. 23, 2004
I followed the recipe exactly. I thought it was okay but after awhile the red peppers didn't taste that great. I think it would be better with a nice grilled chicken breast, but then it wouldn't be vegetarian. I don't plan on making this again.

Grilled Asian Chicken

Reviewed: Aug. 30, 2004
This recipe was alright, but lacked the true bento flavor I was after. I made a few changes: doubled the marinade, marinaded overnight and cooked on the stove top. I also recommend using sodium reduced soy sauce as it was very salty. I will not be making this again.

Garlic Chicken

Reviewed: Aug. 27, 2004
Very good! I upped the cheese and breadcrumbs to 1/3 cups each. I also used 4 crushed garlic cloves and added some pepper & onion powder. It was a little on the dry side. I do plan on making this again.

Key West Chicken

Reviewed: Aug. 18, 2004
This recipe was boring and lacked the flavor I was expecting. I made a few changes. I upped the lime juice, lowered the soy sauce, used tenderloins instead of breasts and left it to marinade overnight. It wasn't bad, but it wasn't great either and it left my friend and I longing for more flavor. I probably will not be making this again.

Apple Crisp II

Reviewed: Aug. 12, 2004
Tasted wonderful. I followed the directions exactly this time, but in the future I will make the following changes: cut the amount of water in half, double the topping and add 1/4 teaspoon of nutmeg. You may need to increase the cooking time as mine was not done in 45 minutes. Great recipe though!

Tomato and Basil Quiche

Reviewed: Jul. 29, 2004
Amazing! I only made a couple changes to the recipe. I used 2 cups of cheese (amount came in package) and after the quiche was in the oven for 10 minutes I sprinkled nutmeg on the top. The flavor was great and I enjoyed everything about this recipe. My only suggestion is to add some more olive oil prior to sauteeing the tomatoes because they tended to stick to the pan. Great recipe and highly recommended.

Lamb Feta Peppers

Reviewed: Jul. 21, 2004
My roommate enjoyed this more than I did but he wasn't amazed by it. Based on previous reviews I made the following changes: added a dash of Aleppo pepper, doubled the garlic and I doubled the sauce. My grocery store did not have ground lamb so I used ground turkey. I am not sure why I didn't enjoy this, but I will probably not make this again.

Easy Red Beans and Rice

Reviewed: Jul. 12, 2004
Kind of a funky meal. Except for the sausage, the ingredients didn't have much flavour and created a strange texture. I followed the recipe almost exactly except I used 3 clove of garlic and at the end I combined everything including the rice into one bowl. I will not be making this again.

Excellent Broccoli Cheese Soup

Reviewed: Jul. 11, 2004
This turned out great. I followed the recipe exactly after scaling it down to 6 servings. I would recommend doubling the amount of brocolli. DON'T FORGET TO SCALE IT DOWN. :) Enjoy...

Awesome Bow Tie Pasta

Reviewed: Jul. 7, 2004
My roommate and I LOVED this pasta salad. I made a few changes to the recipe. As suggested by other reviewers I used a 16 oz. can of diced tomatoes instead of fresh and I added two tablespoons of dried oregano plus two tablespoons of dried basil. I used basil and tomato feta cheese. It turned out amazing! Don't forget to add a touch of salt. If you enjoy Feta cheese and Balsamic Vinegar then you will love this tricky concoction. Very unique recipe.

Mongolian Beef II

Reviewed: May 21, 2004
My roommate and I really enjoy this recipe and it is part of our regular rotation. I made a few changes based upon previous reviews: Used only 3 bunches of green onions instead of 4. Added a medium yellow onion cut into wedges. Added 4 cloves of minced garlic and approximately 1" of fresh grated ginger root to the marinade. Used 2 tablespoon of Aleppo pepper instead of the crushed red pepper and whole dried red chile peppers. I found that the Aleppo adds a nice bite to the dish without being too hot (I'm a whimp when it comes to hot food). I did not think the soy sauce was too overpowering and there was plenty of salt. With the above changes it makes this dish great! Good luck! Update: You may substitute vanilla extract for the sherry. I tried this and it tasted the same.

Pepperoni-filled Bread

Reviewed: Apr. 28, 2004
I didn't think these were too bad. They had a weird taste which I think was the parsley. Overall the bread kind of bored me, I wasn't too impressed. I followed the recipe exactly but will not be making this again.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Apr. 20, 2004
Yum, Yum, Yum! Delicious homemade scalloped potatoes. I highly recommend this recipe. I added 2 extra garlic cloves and immediately before serving I added some shredded parmesan. These weren't that great for leftovers so prepare it for a meal where it will all get eaten fresh.

Easy Slow Cooker Meatballs

Reviewed: Apr. 14, 2004
The meatballs were great; but, the sauce was VERY bland. Before adding the meatballs to the slow cooker I baked them on 350° in the oven for 15 minutes. This helped them retain there shape and to allow the grease to drip off. I added two additional garlic cloves but it was still bland. I would recommend finding a speghetti sauce recipe from here instead of using a store bought jar of sauce. I used Prego traditional sauce, maybe a more flavourful jarred sauce exists? Good luck! I will probably look elsewhere for an more tasty recipe.

Kicky Steak Strips with Rice

Reviewed: Apr. 4, 2004
This recipe was boring and lacked the kick I was expecting. I followed the recipe exactly. Perhaps the steak strips should marinade for longer than 30 minutes? It wasn't bad, but it wasn't great either and it left my friend and I longing for more flavor. I probably will not be making this again.

Chicken Breasts with Herb Basting Sauce

Reviewed: Mar. 29, 2004
Amazing! I have made this many times and really look forward to it. I always make the following tweaks: Double the marinade, use 1 teaspoon of Aleppo pepper instead of the hot sauce, cook for 45 minutes and baste every 15 minutes and add 1 cup of chicken broth.

Stuffed Pork Chops III

Reviewed: Mar. 29, 2004
I enjoyed the flavor and taste except I clearly did not have pork chops that were cut thick enough. The stuffing wouldn't stay inside the pork chop and it ended up being VERY messy. In the future I will make sure my pork chops are cut thicker. I ended up making the stuffing into a gravy as it was overflowing anyways. It still had a great taste and I look forward to trying this again. The only changes I made were... Adding extra garlic power, adding extra butter to the stuffing and using chicken broth instead of beef broth. I will not be adding this to my regular rotation.
