Becki's Oven Barbecue Chicken

Reviewed: Feb. 6, 2005
Wonderful! I made these for the Super Bowl and my friends loved them. I doubled the recipe as I had 20 wings and made a few other changes. These changes are for a doubled batch: added two tablespoons of garlic powder, added approx. 10 drops of hot sauce and added approx. 1 teaspoon of liquid smoke. I also used only 1 1/2 cups of ketchup as other reviewers suggested. Because some reviewers complained about burning I cooked them the first 30 minutes covered with foil and the last 15 minutes uncovered. I also basted every 15 minutes. This was a great recipe and I plan on making this many, many more times.

Mommy's Surprise

Reviewed: Feb. 3, 2005
This was alright. It wasn't as good as I expected. My only change was to add around 1 tsp. of garlic powder. I probably will not be making this again. It was just too bland for me. I will not be making this again.

Chicken Tacos

Reviewed: Feb. 3, 2005
Delicious. I made only a few changes. I used 3 - 10.5 oz. cans of white meat chicken instead of breasts. I prefer the canned chicken in mexican food because it breaks apart easier. I added a small chopped yellow onion to the marinade. I used hard taco shells instead of tortillas but next time i will use tortillas. I also cooked the marinade until all of the fluids had cooked off. In the future I think I won't use an entire head of lettuce as I had way too much leftover. Great recipe Tara.

Beef and Wine Soup with Dumplings

Reviewed: Jan. 31, 2005
I enjoyed this soup, but my roommate did not. He didn't care for the strong wine flavor that was present. I used a smooth merlot that added depth but the overall recipe was less flavorful than I had hoped! I made the following changes / tweaks: added an entire chopped small yellow onion, used 3 cloves of garlic, added a 1/2 pound of sliced mushrooms, used approx. 6 oz. of dumpling style egg noodles and increased the tomato juice and red wine by 1 cup each. If I make this in the future (which I probably won't) I will increase only the tomato juice and broth by 1 cup each and decrease the wine by 1 cup. Some additional spices should be added for flavor, but I am not sure which ones. Thyme and parsley?

Tortellini Stir-Fry

Reviewed: Jan. 31, 2005
I love this recipe and it has become a part of my regular rotation. It is a nice change from the usual sauce and pasta and an interesting way to serve tortellini. I make a couple of changes: add 2 tsp. of minced garlic, increase the stir-fry sauce to 1/2 cup and leave off the peanuts. To make the dish a tad bit more filling I add a chicken breast that is cut up into strips. I highly recommend this recipe.

Amazing Sun-Dried Tomato Cream Sauce

Reviewed: Jan. 21, 2005
This is a very good sauce for tortellini. The only changes I made were to use walnuts instead of pine nuts and to add approximately 1 teaspoon of garlic powder. The garlic powder definitely improved the sauce. Initially I wasn't sure which type of sun-dried tomatoes to use. I decided used dry packed sun-dried tomatoes, next time I will use oil packed sun-dried tomatoes because the dry packed ones stayed very firm and I didn't like that texture. In the future I will also leave the nuts out of the recipe. I look forward to making this again.

Mary's Roasted Red Pepper Dip

Reviewed: Jan. 9, 2005
My friends and I really enjoyed this dip. Based on previous reviews I made a few changes: used 2 tablespoons of dry minced onions, used 4 cloves cloves of minced garlic, used 2 cups of shredded monterey jack / colby jack cheese and added a half cup of shredded parmesan cheese. I prepared the dip in two Pyrex 5 X 7" dishes and cooked them approximately 25 minutes. I plan on making this for many upcoming parties.

Romano Chicken

Reviewed: Dec. 29, 2004
I wasn't sure what to expect as its cooked in the microwave. I loved this meal and plan on adding it to my regular rotation. I only made one change: used mozzarella instead of swiss. Its a little messy to roll them all up but its worth it.

Turned out wonderfully. I used a bottle of Corona instead of white wine. I also recommend adding just enough water to cover the roast completely. Great recipe.

Sweet and Sour Chicken I

Reviewed: Dec. 29, 2004
This recipe is authentic and tastes very similar to the restaraunt style sweet & sour chicken. I probably will not make it again though because of the amount of work. Great recipe.

Turkey a la King

Reviewed: Dec. 29, 2004
I doubled the recipe as other reviewers suggested. I also added 1 chopped red pepper which added more color. Something I added which I would not add again was a cup of pearl onions. I did not like the texture and their flavor was overpowering. If you like onions I would suggest adding some onion powder. I served this dish over white rice. I may or may not make it again. It is however a great way to use up leftover turkey.

Herman Reunion Cheese Ball

Reviewed: Dec. 1, 2004
Quick and easy. Using the freezer to firm the cheese ball is a great idea. I followed the recipe exactly and it turned out delicious. I recommend scaling it to 8 servings to get the perfect size cheese ball for a small party. You may want to play with the different brands of hot pepper sauce available.

Gyroll

Reviewed: Oct. 25, 2004
This turned out great. I would recommend serving with Tzatziki sauce. In the future I am going to attempt to make four individual rolls instead of just one. The only change I made to the recipe was to use more dough than called for. I will be making this again and again and again!

Broiled Herb Butter Chicken

Reviewed: Oct. 25, 2004
This recipe didn't go very well. It created a whole lot of smoke and was not very flavorful. If I HAD to make it again I would marinade the chicken overnight and cut the butter in half. The only change I made was to add 2 tsp. of italian seasoning. I highly recommend "Chicken Breasts With Herb Basting Sauce" instead of this recipe. I will not be making this recipe again.

Greek Souzoukaklia

Reviewed: Oct. 14, 2004
It was alright. The flavor was nice and I enjoyed the sweetness. I might make it again someday. I didn't see the point of the kabob sticks so I cooked them as hamburger patties. I will probably not be making this again.

Braised Balsamic Chicken

Reviewed: Oct. 8, 2004
I cooked this on medium heat and followed the recipe almost exactly. I did add 3 cloves of minced garlic. My friend and I both enjoyed the flavor and the spices. I served it over white rice and with green beans. I do plan on adding this to my regular rotation.
