Salmon with Brown Sugar and Bourbon Glaze

Reviewed: May 15, 2006
Absolutely wonderful. I followed the recipe exactly and it turned out perfect. I'm not sure why the previous reviewers experienced burned food, I had no problems. Just in case though, be sure not to use too much heat. Good luck!

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Mar. 14, 2006
A very unique dish. The only change I made to the recipe was to add 5 or 6 chopped up sun-dried tomatoes. I think this dish would be better as a hot pasta dish instead of being a stand-alone dish. I hope to make this dish again and again but with a few changes: Dice up the chicken; add 1 cup chicken broth and boil it down to create a nice sauce; serve it over penne pasta and include the sun-dried tomatoes again. I look foward to trying it with the above changes.

Clark's Quiche

Reviewed: Mar. 8, 2006
I made this for friends and they really enjoyed the dish. The only change I made was to leave off the spinach. I will make this again in the future.

Absolutely The Best Shrimp Scampi

Reviewed: Feb. 23, 2006
Good but not the absolute best. I made no changes to the recipe followed it percisely. It has great texture and flavor. I suppose I was hoping for something more garlicky and buttery (shrimp scampi served at Red Lobster). I'll keep searching though. I won't add this to my regular rotation but I will keep it handy.

New England Clam Chowder I

Reviewed: Feb. 20, 2006
I was looking forward to this recipe and followed it exactly. I made no changes and was very disappointed with how it turned out. The soup was very watery and had an unusual texture. I also think it was just a tad bit too chunky for my tastes (cook the potatoes longer?). I plan on looking for additional clam chowder recipes to try and leave this one alone.

Baby Spinach Salad with Tomato and Mozzarella

Reviewed: Feb. 17, 2006
I absolutely love this salad. Think of it as Caprese Salad with a twist. The only change I make is to halve a pint of either cherry tomatoes or grape tomatoes instead of the beefsteaks. They have far more flavor and really add to the presentation. I also use more olive oil and vinegar than is called for. Be sure to only use fresh herbs and a more expensive aged balsamic. The last time I took this to a potluck this salad received wonderful reviews!

Strawberry Tiramisu for Two

Reviewed: Feb. 15, 2006
I made this for Valentine's Day dinner as suggested by the Allrecipes Newsletter. Even though the recipe can be hard to follow, I enjoyed it very much. The flavor was amazing and the presentation alone looks beautiful. There may be a problem with the number of strawberries called for in the puree, but still having enough remaining for the layering / garnish. I recommend setting aside 5 or 6 strawberries to use in the layering / garnish and using the rest for the puree. I highly recommend this recipe and look forward to making it for guests in the future.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Reviewed: Feb. 15, 2006
I made this for Valentine's Day dinner as suggested by the Allrecipes Newsletter. The flavor was unique and interesting. I thought the oranges, red onion and gorgonzola were very tasty together. The dressing turned out well and I do hope to make this again.

Lemon Rosemary Salmon

Reviewed: Feb. 15, 2006
I made this for Valentine's Day dinner as suggested by the Allrecipes Newsletter. It turned out wonderful! The flavors were amazing and complimented eachother well. In addition to using extra virgin olive oil I also added some garlic & oregano flavored olive oil. I highly recommend this recipe and hope to make it again soon.

Double Chili Cheese Dip

Reviewed: Feb. 9, 2006
I thought this recipe was only okay. The flavor was good, but not amazing. I have recipe dip similar to this that I think I will stick with. If I were to make it again, which I probably won't, I would blend all the ingredients together and then top with the cheese instead of layering the ingredients.

Garlic Cheese Chicken Rollups

Reviewed: Feb. 7, 2006
I found this recipe to be absolutely amazing! I followed the recipe exactly, but with my own cheese spread. I added together a package of cream cheese, dry chives, minced garlic, garlic powder and onion powder and blended it in the food processor until wonderfully whipped. This is one of the best new recipes I've made in weeks. I highly recommend everyone try this at least once!

Lamb Chops with Balsamic Reduction

Reviewed: Feb. 1, 2006
When I first read this recipe I wasn't sure what to expect; but I was pleasantly surprised. I wasn't too impressed with the steaks I purchased (fatty and poor meat quality), but that isn't the recipes fault. The balsamic vinegar made for an interesting sauce. I used a more expensive 8 year old (aged) balsamic vinegar. It was a bit more spendy but worth it as it made the sauce wonderfully smooth. I highly recommend spending the extra money and getting a higher quality balsamic vinegar for this dish.

Balsamic-Glazed Salmon Fillets

Reviewed: Jan. 27, 2006
This glazed salmon turned out wonderfully. I followed the recipe exactly and did not make any changes. It almost turned into a disaster though as I mis-read 1/3 cup balsamic vinegar for 1/3 cup honey. I was 2 seconds away from adding the honey when I realized my mistake. The flavor had depth and my friends enjoyed it too. If you enjoy salmon, you'll enjoy this glaze.

Delicious Artichoke Dip

Reviewed: Jan. 24, 2006
This recipe didn't turn out the way I had hoped. It may have been the changes I made, but I think it is the sour cream in the recipe. The flavor was great, but the texture was very off. I added a package of cream cheese, added 1/2 cup of shredded parmesan cheese and just a little bit of garlic. The texture of this dip reminded me of warmed up marshmellows. I will not be making this version again.

Herbed Chicken and Fettuccini

Reviewed: Jan. 11, 2006
I almost gave this recipe four stars but I just think it doesn't have enough flavor as written. It also isn't the best for leftovers. I followed the recipe exactly and if I were to make it again I would add 1 tbsp. of italian seasoning.

Seven Layer Tex Mex Dip

Tasted great. It is almost the exact same as the one I grew up with that my mother made. The only change I made was to leave out the mayonaise.

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Jan. 6, 2006
An overall tasty dish. The recipe calls for rotisserie chicken which I believe is VERY unnecessary given what is done to the chicken later. I cooked 2 chicken breasts on my George Foreman, (yes the Lean Mean Fat-Reducing Grilling Machine) and the dish turned out wonderful. I also made a few more changes: used 2 onions instead of 1, added garlic and 1/2 lb. of sliced mushrooms to the onions as they sauteed. These changes were based upon previous reviews. The cooking time may need to be adjusted as well. I found that the broth was not absorbed in the 20 minutes it suggested so I had to cook it for about 30 minutes. I plan on making this many, many times.

Orzo and Tomato Salad with Feta Cheese

Reviewed: Jan. 6, 2006
This is a light refreshing salad. Its a great dish, especially if you enjoy tomatoes and feta. I recommend trying to eat it quickly as if its in the fridge for more than a couple days it starts to go bad. I used Kalamata olives and added a splash of balsamic vinegar.

Vietnamese Salad Rolls

These were a very refreshing appetizer. They are kind of time consuming to make but a wonderful for a light dish. I recommend serving them with Mae Ploy sweet chili sauce.

Yummy Cheese Ball

Reviewed: Jan. 6, 2006
This has been very popular at a couple of my parties. I enjoyed it but found the cheese ball to be slightly greasy due to the amount of bacon used (its definitely not a healthy party snack). I made a couple changes: I added 1 tsp. garlic powder and 1 tsp. onion powder. I served the cheese ball with crackers. I plan on making this for any more parties I have.
