Prosciutto Wrapped Asparagus

this recipe is excellent. I made it for Easter and it was a huge hit! I peeled the larger asparagus and blanched them all for 1 min then ice bath. I combine white asparagus with green for an awesome presentation. I also used garlic/herb cream cheese. Roasted at 450 for 12 min. YUMM

Braided Easter Egg Bread

I made this bread for my daughters class and the kids oohed and ahhed over it. It was gobbled up in minutes. The presentation is beautiful. I only baked it for 25 minutes. Watch the time.

Mom's Apple Pie I

Antipasto Salad II

Awesome recipe! I made exactly but did not use the tomatoes. I cut the meat and cheese into small 1" squares. I sprinkled the marinated artichoke juice over everything instead of using oil and vinegar. A huge hit and colorful!

Tropical Turkey Meat Loaf

This meatloaf is excellent! I changed a few things though. I used oatmeal instead of bread crumbs and 3/4 c. egg substitute and a 16 oz. can crushed pineapple. I let the oatmeal soak up the egg and 1 c. of pineapple. For the sauce, I doubled the ingredients and didn't have a jalapeno so instead used a pinch of cayenne pepper. I also heated the sauce in a microwave for 1 min. This was fabulous! I will make it again!

Coconut Cream Cake I

Absolutely phenomenal! I took another's advice and only used the coconut creme and cut out the sweetened condensed milk. This cake is to die for!

Cream of Asparagus Soup I

This was really good. I did make some alterations. I didn't have soy sauce, so omitted that. I used my hand held mixer and pureed everything but there were still clumps so I strained it. Turned out pretty good. Oh I used evaporated skim milk in place of 1/2 and 1/2 to make it fat free.

Barbequed Ribs

These ribs are to die for. I brought these to a party where 4 people made ribs and these were by FAR the best. I did make a few alterations. Instead of the chili sauce I added an extra 1/4 c brown sugar, 1 tsp allspice and an extra 1/4 c ketchup. I also added 2 tbsp WHISKEY and reduced down (next time I will use 3 tbsp whiskey). After baking in oven and then rubbing the spices over (I thought this odd to do it after they were cooked but it worked). I let them sit overnight in the fridge. We then lit the charcoal grill and basted them with this yummy sauce. Out of this world!

McCormick® Cranberry-Sage Mini Crab Cakes

These were excellent and I would have given it 5 stars but I changed up the recipe. First of all I added a half bag of dried cranberries as 1/4 c. was not enough. I fried them in butter and canola oil as the butter burned. I used 1 tbsp of sage. I also made a remoulade sauce to go with these, which was a combination of mayo, stone ground mustard, diced onions and a few drops of franks red hot. These were very good! Will make again.

English Trifle

This is an excellent recipe. I used a store bought angel food cake (it gets a little mushy but still tastes great) and I added crushed pineapple to the layers. I didn't have orange juice so used a little lemon juice so the bananas wouldn't turn brown. All fresh fruit in the summer is a plus! On the top I used fresh strawberry wedges and no almonds or cherries. The whole thing was gobbled down in about 5 minutes! Let it sit in the fridge for a few hours.

Homemade Black Bean Veggie Burgers

Absolutely delicious. As another poster commented, I pureed 1 cup of brown rice and 3/4 c. shredded mozzarella and added it to the mixture. I didn't add the hot sauce and only put in a 1 tsp of chili powder. I also used 4 cloves of garlic. Fried them up in some olive oil and they were divine!

Sweet and Sour Pork III

This recipe was AMAZING! I followed exactly except used boneless chicken instead of pork. I also did as other suggested and did not combine everything together until the meal was ready to be served and then I placed the chicken on the top. Will definitely make again!

Dill Pickles

These are the best dill pickles I have ever made! Can't wait to make them again! EXCELLENT! Soaking the cukes in ice water for at least 2 hours makes sure they are super crunchy when you open the jar . . . even a year later!

These were excellent! Drizzle dark chocolate or dip one end in melted dark chocolate set on wax paper, watch them disappear. Great to dip in your morning coffee! Will make again!

Blueberry Strata

This was excellent! I had a huge party and made this 2 weeks ahead and froze (before cooking it). I took it out the day before and cooked it at 375 for an hour and served with plain maple syrup. Very good and will make again!

French Pastry Pie Crust

Absolutely FABULOUS. Followed exactly but kept the dough in the fridge for about an hour. Rolled out between 2 sheets of saran wrap. Best pie dough ever! It's a keeper.

Sausage Pasta

This was awesome! I did make some changes. I deglazed the pan with 1/2 c. cooking sherry and then added the onion, garlic and 1 sweet red pepper. Sauteed them for about 5 min. then added chicken boullion, water and tomatoes. I subbed the spinach for collard greens. This is definitely a keeper.

Chicken Piccata II

This is a really good recipe. I did alter a bit from an older recipe I had. I added a cup of white wine to 2 cups water and 3 chix boullion in a small pan and reduced for about 20 min. Then after frying the chicken (skipped the egg dip and just used flour) I poured my reduction into the fry pan, to deglaze and added 3 tbsp of lemon juice and half a stick of butter. Placed the chicken back in the pan for about 10 more min., turning once. This recipe is lick the dish good! LOL
