Spaghetti Sauce II

Reviewed: Feb. 2, 2012
I too made the following changes: I opted for lean ground beef instead of pork (just a personal perferance), I sauteed the onion til translucent, added the garlic, sauteed an additional minute, added the ground beef and browned until all pink was gone. I then placed all the other ingredients in the crock pot, along with the beef, onion and garlic and placed on slow 6 hour cook time and went about my day! We tossed with home made pasta noodles just before serving!

Chicken and Red Wine Sauce

Reviewed: Apr. 29, 2011
I too have made this dish, several times. Have made the following changes: I use 1/2 cup brown sugar, 1/2 cup red wine AND use 3 whole carrots, peeled and med. slice on the bias and approx. 10 leaves of fresh sage. I add the carrots and sage with the wine and just let it simmer away. It makes for a wonderful winter's dish, serve over smashed garlic potatoes...with a nice crusty loaf of bread, the rest of the red wine at the table, or in front of the fireplace! YUM-OH

Extreme Banana Nut Bread 'EBNB'

Reviewed: Mar. 14, 2010
O.k., so, don't laugh, but I halved the recipe which was the perfect portion for us. This is the change up that I made to this....I added 1/4 tsp of ground cinnamon, and used toasted pecans in place of the walnuts...Now...I baked it, served it with cream cheese...yummy...BUT the BIG surprise and the best thing in the world, use this for pancakes...I made pancakes, and served with a warm pecan butter syrup....I had to make extra...wow...double wow!!

Cadillac Pimento Cheese

Reviewed: Jan. 23, 2010
I only changed one thing, just a personal preference for the "tasters" in my crowd, instead of the jarred pimentos, I subbed roaseted red peppers, very thin sliced/diced. It was wonderful and went in about 1 minute flat! Thanks for sharing!

Lemon Bisque

Reviewed: Nov. 1, 2009
I cannot tell you how simple this recipe is and just how wonderful the taste is...the first bite is just creamy and wonderful, you get the lemon, but it's not over-powering as some lemon desserts are, then, just as you think you've had enuff, you have to take another bite!

Fried Apple Pies

Reviewed: Nov. 1, 2009
I've made these more times than I'd care to count now...this is almost "identical" to our family recipe, with the exception of...I use cold butter in place of shortening and add just a pinch more salt to the dough. The salty taste with the puncy cinnamon of the apples is wonderful. We also use chunky applesauce & sometimes the home-made apple brandy butter we have on hand as the filling with a few choped pecans for an extra special surprise!

My whole family loves these cookies. I added a cup of re-hydrated golden raisins as well as just a pinch more cinnamon. They are easy, fun to bake with the children and get wonderful reviews no matter where we take them! Thanks for sharing a great recipe!

Broiled Tilapia Parmesan

Reviewed: Sep. 16, 2009
We love this recipe, as we love Tilapia! I made the following adjustments and thus far we've stuck with the altered version. I sub'd the celery salt w/celery seed, cut back to just under 1/4 cup butter, used real parm, freshly grated and added 1/4 tsp. adobe from the chipotle' can! The family loves this version and it pairs well with anything! It also makes a wonderful sammy w/cilantro mayo...YUM!! :)..

Pico de Gallo Chicken Quesadillas

Reviewed: Jun. 8, 2009
Love the recipe, with a few tweaks of my own, my whole family devoured it! I used leftover grilled (very smoky) chicken breasts from a party the day before and subbed the jalepeno' with a couple of smokey chipotle' peppers (no seeds). When we were ready to assemble, I grilled them over hot hickory chips and we again ate them outside on the deck! Wonderful flavor coupled with wonderful atmosphere and family and we have a HUGE hit on our hands!! Thanks for sharing the recipe!

Chocolate Sandwich Cookies II

Reviewed: Feb. 28, 2009
The 1st time I made these, I followed the recipe exactly, the second time, I subbed the oil with 1 stick softened butter. I like them better with the butter, they seem softer somehow?! I use home-made marshmallow cream (on one side) for the filling and spread Nutella, on the other side...Yummmmmeeeee....goes great w/ milk or coffee for a late nite dessert!

Pizza Dough I

Reviewed: Jan. 21, 2009
O.k., so I tried the recipe out on the taste tasters in my house, just with marinara & cheese...they liked it just fine, then I made it again, same way, added dried basil and garlic to the recipe and it was a super hit...then, "drum roll" made it again, topped it with leftover homemade teriyaki sauce/chicken (recipe from allrecipes)that I had made the day before (no marinara), pineapple chunks, carmelized onions and just a bit of shredded basil and fresh moz....and, eureka! I am now the pizza pie queen of my home. It was a huge huge hit! I've also used the recipe for bread sticks, flat bread, cinnamon rolls (I know, I know)and everything about it works and is simple!

Blackened Tilapia with Secret Hobo Spices

Reviewed: Jul. 28, 2008
You can actually buy blackening seasons (Prudhomme, sp?) is what we use...and we follow the directions on the bottle...We serve on a Keiser roll with the seasoned mayo (1/2 c sour cream, 1/2 c Mayo, 1 TBS chopped fresh cilantro, 1 tsp, fresh lemon juice, 1/2 tsp blackening season) which is something we just experimented with, and lettuce...of course the kids think it's best w/ fries and cole slaw...but I concede...I like the Tilapia on a nice bed of greens!!! :)

Baked Teriyaki Chicken

Reviewed: May 19, 2008
I love this recipe. I make the sauce, but add 1/4 cup pineapple juice & then cheat, I put everything in the crockpot for slow cook on 6 hours. When chicken is ready, I top with 1/2 cup pineapple chunks, 2 chopped spring onions. I let it sit in the warm liquid til warmed thru. Then serve with what my children affectionately call "Mom's jewelled rice". It makes a wonderful meal! Thanks for sharing!
