Wonton Wrappers

Reviewed: Oct. 29, 2009
Very good recipe. I used my pasta machine to get it rolled thin enough. The dough was very easy to work with using corn starch instead of flour for the "flouring" of the work surface and the machine. I filled as I rolled so didn't have a problem with anything sticking together. I will make this again.

Caramel Popcorn

Reviewed: Sep. 22, 2009
This is so good it should be illegal! The secret is keeping the popcorn hot. I think that's what keeps it from deflating when you put on the caramel. Also the stirring during the baking time, that seems to be essential. I use wooden spoons for the mixing and stirring and I grease everything. I've made this twice now and both times it has come out just melt in your mouth perfect. I have the sweet and salty thing going on so I up the salt some. I roast fresh peanuts to put in and I also use air popped corn. In my air popper, which has it's own half cup measure, I use two half cup measures, that's two batches, half cup at a time, and then another quarter measure and that has given me the correct amount of popped corn. I keep the corn hot in the 250 oven and just follow the recipe from there. I have cut the butter in half and it's just as good really. I thought I'd only make half a recipe this time but for some reason ended up making the whole thing, stuff really is addictive! lol

Cream Puffs

Reviewed: Dec. 22, 2008
Very good recipe! Just got through making this. I took some of the advice of mommyfromseattle and added vanilla to the puff dough, off heat or it will evaporate, and right after baking poked the holes with the toothpicks. I did not however add all the eggs to the hot mixture. I am not a pro like mommy but I do have 35 years of home cooking experience and that was just too much of a chance for me. I used my mixer and cooled the dough some first and then added the eggs one at a time mixing well after each. There is usually a reason behind an instruction like that I have found. While it may not make a difference that we can see it may very well have to do with how the finished product turns out. I used french vanilla instant pudding and made it by the package directions and then piped it in using whatever small crevices were created in the baking of the puffs. They really were to die for.

Party Pinwheels

Reviewed: Aug. 22, 2008
Really good and really simple for me. Was a huge hit at the Push America function for people with Intellectual Disabilities. It is good to make as it cuts into quite a few pieces so it is actually pretty economical to make for a crowd.

Sangria Ham

Reviewed: Aug. 22, 2008
The best ham I have ever cooked and I been cookin em for 30 years. I will for ever use this recipe. I use an injector like for a deep fried turkey. I make a double recipe and I inject half or so and let it sit over night in a clean trash bag in the fridge and then the next day start the roasting process and then start the basting. Rave reviews from family, friends, functions! You are a genius!

Kentucky Biscuits

Reviewed: Dec. 22, 2005
What a great recipe for biscuits!! Just as light and tender as you could want. I did up the salt as others did the second time I made these and it did make a difference. Hubby doesn't like biscuits but he sure split and buttered these. Put them in the bottom of a big bowl and ladled my beef stew over, whoo what a meal!!! Definitely a keeper!!

Sweet Dinner Rolls

Reviewed: Nov. 19, 2005
Made these last night for dinner and while the dough was wonderful to work with, and they tasted great, I found them to be a bit on the tough side and were not really flaky. It could have been the margarine, I usually use real unsalted butter but just didn't have any, or it could have been I had them too close together for baking, maybe should have broken out another baking pan. I'll make them again for sure. Great recipe to experiment with. :)

Really good basic chili. There is so much you can do with this. I've been experimenting with it and it comes out great every time. I used roasted garlic this last time and it was just wonderful. I added more beans too. Will be making this alot this winter.

Unbelievable Rolls

Reviewed: Jan. 9, 2002
I'm sorry but I must have done something very wrong with these. I was not at all happy with the way they came out. They were very dry and course. I'm sure it was just me and I'm gonna give it another shot here soon. All was not lost tho, I ground them up and am using them for bread crumbs.

Angel's Old Fashioned Beef Stew

Reviewed: Jan. 9, 2002
Very good stew! I used fresh garlic, and didn't have celery on hand so I used celery seed for the flavor and it was just fine. I was very pleased with how thick and hearty it came out. The flouring and browning of the meat is what does it. The meat was very tender. I will make it again.

Mama D's Italian Bread

Reviewed: Jan. 9, 2002
Really good bread, no doubt about it ! I threw in a tbls or so of italian seasoning with the last of the flour. I cut the salt just a bit too. I only made one loaf and should have made all three, it was gone in less than 24 hours and there are only three of us!

Focaccia Bread

Reviewed: Nov. 18, 2000
This has got to be one of the best recipes I have ever made! It was quick, simple to make, and my son, who doesn't like to eat bread with a meal ate two pieces and then asked for another. I was even some short on the yeast but it turned out just great! Really a keeper!

Italian Herb Bread I

Reviewed: Oct. 15, 2000
If it were possible to give more than a 5 card rating I would! This is the best Italian Bread I have ever made. Even my hubby, who always teases me about my breads had nothing to say, His mouth was to full! At least a 10 card rating should go to this one.
