I love cooking just about everything. I am not a picky eater so I make any thing that sounds goods. I am hispanic but my imagination for food goes way beyound latin dishes.

Summer Special Shrimp and Fruit Fried Rice
Thanks for the recipe Keka. I have to say I did enjoy the way all the flavors married together; however, next time I will make a feel changes. First, instead of slicing the onions I would opt for diced. Just my own preference but if you have picky kids sliced may be the way to go so as to pick them out. Also, for me 2 onions was way too much and I even doubled the recipe. Next time I will use half and onion or a whole onion if I double the recipe again. As for the soy sauce I found that 2tbsp suited my taste more which after doubling the entire recipe came to 4tbsp. Although, I have to note that I didn't add any extra salt or pepper. Last change I made was to leave out the cilantro. I am sure it would have been just as good with since I do love cilantro. Only thing is I am the only one who likes it in the family so just as well to leave it out. All in all this was a good twist on shrimp fried rice and I will make again.

Sloppy Joes II
Just made this for dinner tonight and it was a winner. I did make a few changes suggested by other reviewers. I used 1/2 cup of ketchup and 1/4 cup of BBQ sauce. I also added 1/4 of diced red pepper which seemed to disappear along with the green pepper and onion after having cooked. This was a good thing since the husband isn't so keen on peppers. LOL I added about 1/2 tsp of onion salt instead of plain salt and also added 1 1/2tsp of hickory liquid smoke. Super Sloppy Sandwich served with coleslaw made for a wonderful meal. Thanks.

Barbecue Ribs
Finger Lickin Good. Even though I had to make a few substitutions these ribs where good. I didn't have the chile sauce so I used what I did have on hand and that was 1/4 cup of mild pace picante sauce and to keep it spicy 1/4 cup of chipotle tobasco. I also didn't have the dry mustard so I substituted with 2tsp of prepared mustard. All in all these ribs still turned out excellent. Another note, I didn't not marinate my ribs. Like others I simply boiled them for 2 1/2hrs. Then I baked them at 350 degrees coverd for 30mins, 30mins uncovered, and broiled 5mins per side at 400 degrees all the while basting with the marinade. Recipe has already mades it way into my "Favoretes" cookbook. Thanks for the entry.
