Dijon Crusted Halibut

The kids really loved this, especially the topping. I thought mine was a bit dry, but my boyfriend didnt take them out when he was supposed to so I will make it again and see if turns out better.

Butternut Squash, Apple, Onion Au Gratin

My kids totally raved over this recipe. I added chunks of uncooked chicken breast, and sliced baby potatoes. I poured off some of the stock before I returned it to the oven, as it wouldve been too much liquid, but having it there to start with kept it moist. I will be making this a lot!!

Chicken Cordon Bleu II

I followed other suggestions, brushed chicken with egg,coated in lots of breadcrumbs with paprika, browned it in olive oil and crushed garlic, then popped it in the oven. It was perfect!! I did the sauce separately in the pan, I added basil and plenty of parsley, it was good but too salty as I used a cooking wine...these have salt added. The kids loved it.

Awesome Carrot Cake with Cream Cheese Frosting

This was really good with a few modifications as mentioned several times already.Heres what I did: 4 cups of carrots instead of 3, only 1 cup oil, 1/2 cup white sugar, 1/2 cup brown sugar, 1/2 cup splenda, 3 tsp cinnamon, tsp combined of allspice & cloves, tspn nutmeg, tspn ginger. I completely drained the pineapple juice off the pineapple. I used 1 cup coconut, no raisins or nuts. Cooked in 2 square cake pans. Cook longer than 40 mins.

Apple, Carrot, Or Zucchini Cake

I made this cake with apple only. I took a previous reviewers advice and added 2 eggs and 1/2 cup oil. I also used some cloves & allspice along with the cinnamon and some nutmeg. After grating the apples, I let the juice settle at the bottom of the bowl and did NOT add the juice to the recipe to avoid excess wetness. I cooked it in 2 cake pans, one was a regular round cake pan, and the other a much darker square pan. The cake cooked perfectly in the darker pan, it cooked quicker and more evenly, whereas the cake in the 9" round pan took way longer, was a bit overdone and a still a bit wet on the inside. Both cakes took a LOT longer than 40mins, which Im assuming why previous reviewers state having a way to wet cake. You have to test it with a wooden skewer and keep cooking till its done. I frosted the cakes with a cream cheese frosting, and the cake that didnt work out so well was fine after sitting in fridge overnight with frosting. The overdone exterior was softened by the frosting, and the wet inner part firmed up. All in all, not too bad with the few changes to the recipe!
