Orange Cornish Hen for Two

Tried this for the first time for company and it was a success. So simple, classic and tasty. The only changes I made to the recipe included adding a bit more pepper due to personal preferences and lowering the temperature to 350 degrees F for the last 30 - 40 minutes. Served this with Basmati rice and glazed carrots....Very tender and tasty and great for company....I forgot to mention I did make this for 4 people so I adjusted the ingredients accordingly.

Roasted Brussels Sprouts

Any recipe that can make me like Brussel Sprouts deserves 5 stars. I used a clay roasting pan and seasoned the sprouts with vegetable oil, sea salt and pepper and kept an eye on them as the oven was very hot. A big hit with the entire family.

Lucky's Quickie Chickie

This raises the bar on a simple to make chicken dinner. I followed the recipe exactly including fresh basil which was so terrific in this dish with the honey and balsamic. 5 Stars for a simple and flavourful dish you can whip up in no time. Thanks Lucky...I think even the Picky will love this Quickie Chickie...

Oven Roasted Parmesan Potatoes

You are going to want to double this recipe. Perfect blending of spices combined with crispy outer edges and soft and tender centres make these roasted potatoes disappear. I followed the recipe exactly except I roasted them on a clay baking sheet. Sour cream is not necessary...these are so good all on their own.

Rich and Delicious Banana Bread

Banana Bread is one of my favorite things to bake and I found this recipe when I was out of eggs. I am so impressed at how the loaves turned out I had to add my comments. This is a keeper, easy, moist and yummy! I only added mini chocolate chips.

Sauteed Radishes

These were well received amongst non radish lovers so I take that as a positive endorsement. I used olive oil instead of butter as previous reviewers mentioned and added some garlic powder to the seasoning but other than that made as written. I would make these again...easy preparation and worth a try...

Potato Chip Chicken

Chicken was moist even without the marinating which I skipped because I didn't have time. My family seemed to enjoy this recipe and I let my kids choose the flavour of chips. I dipped the chicken in melted butter and coated with sour cream and onion chips. The flavour of the chips really didn't come through but it didn't seem to matter to anyone. I added salt and pepper and a dash of garlic powder to each piece of chicken and baked on a foil covered baking sheet. 35 mins was plenty for the bone in chicken thighs we had. Will try again with different type of chip. If you like breaded chicken it's worth a try.

Cookies....All Dressed

We loved these at our house. A substantial cookie that you can easily add your own favourites to. For my first batch I added raisins and sunflower seeds instead of pecans because of nut allergy. I used my hands to mix the dough on the advice of a previous review and found the dough easy to work with. Loved the texture and taste of this cookie...will make again.

Make-Ahead Sour Cream Coffee Cake

This is terrific first thing in the morning with your coffee. Making it the night before makes it so much easier to have the fresh baked goodness bright and early. I omitted the pecans due to allergy and added a bit more cinnamon...the whole house smelled great as an added bonus.

Chunky Monkey Brownies

Bananas and Chocolate and Brownies Oh My! These Chunky Monkey Brownies are now my family's official favourite treat. Very moist and good banana flavour with the hearty addition of oats make these perfect as a filling treat. I followed recipe with the exception of omitting the nuts due to an allergy. They were delicious even without the added crunch from the nuts. These will be good for the back to school lunch bag...thank you for sharing a delicious recipe.

As the creator of this recipe I encourage you to tweak it to your heart's content…Creamy chocolatey and very easy to make with just a few ingredients. Looks pretty in an Irish Coffee glass with a dollop of whipped cream on top… great for the Holidays or any day … brings a smile like a warm hug… :)))

Simply Chocolate Granola

This is a wholesome chocolatey treat that we absolutely love at our house. I first made this when it was a personal recipe before it became kitchen approved. My daughter loves it as a snack on its own…I add it to my yogurt and cereal for a delicious crunch and we all top our frozen yogurt with it when there is any left. I usually stick to the recipe except for the odd extra handful of chocolate chips. Also I watch the baking time fairly closely as I like it crispy but not overdone. Thank you CC loves to bake… we love your granola.

Cool Cucumber Salad

Cucumber salad as I remember it! It wasn't until I sampled this after putting it together and refrigerating it that I realized this tasted just like Mom use to make…and Grandma before her. Can't go wrong with this classic cucumber salad.

Juicy Roasted Chicken

At first glance I was attracted to this roast chicken recipe because of it's simple ingredients and ease of preparation. I didn't have much time to get this dish together and in the oven. I didn't have to compromise on taste or moistness because this combination yielded the "juiciest chicken" I ever made according to my Hubs…and I have made a LOT of chicken over the years. The only thing I adjusted was the cooking time since my chicken was larger than the recipe called for. Using a meat thermometer will ensure you have fully cooked your chicken. Thank you for a real keeper.

Chocolate Banana Smoothie

After making this recipe a few times I prefer to use a frozen banana and a generous extra bit of chocolate syrup with the milk and skip the ice…the texture is more to our liking this way… chocolate and banana is a classic combination and if you like that you'll like this….

Simple Broiled Haddock

The spices really appeal to me in this recipe….I was looking to jazz up the haddock filets I had and this fit the bill. For my own tastes I added a bit extra cayenne pepper and used half the butter. Under the broiler my filets were done in 8 minutes with a nice slightly crispy edge… I look forward to making this healthy dish again.

Oreo™ Cookie Bark

These were so easy to make…I used gingerbread oreos and semi sweet chocolate and topped them with vanilla flavoured baking chips… These were the first to go from the tray of treats I brought to work… I wouldn't hesitate to make these again with different variations of cookie and chocolate. Very sweet!

Roast Beef cooked in Pasta Sauce The Italian Way.

This dish is an example of home cooking at its finest in my opinion. It's a dish that I will make again and again switching the meat from roast beef to chicken and pork. I can see myself using my slowcooker on occasion for this recipe also and coming home to a warm inviting meal like this would be lovely..not to mention how wonderful it smells... I served my roast with broad egg noodles and prepared it as written with the exception of not blending the tomatoes...My family thinks I can actually cook now...thanks Manella
