Becky AKA Grandmaplenty
About this Cook
I have two grown daughters and between my husband and I we have 10 grandchildren. I love to cook, scrapbook, card making, paint, sew and read. My hobbies keep me busy. On a rainy day I can be found cooking up something yummy!
My favorite things to cook
Cookies are my specialty as well as homemade breads. I love trying out new recipes with everyday ingredients.
My cooking triumphs
My Chocolate Peppermint cookies are so delicious I can't keep the cookie jar full.
My cooking tragedies
I made a chicken casserole dish and topped it with canned bisquits. The bisquits cooked on the top but the bottom was raw and sticky. I haven't tried anything with bisquits on top since.

Iced Pumpkin Cookies
OMG! These are the best! I added extra spices as other reviewers suggested and also added 1 cup of raisins and 1/2 cup chopped walnuts. I also used 1/2 cup of brown sugar in place of the 1/2 cup of white sugar. I added cinnamon in the glaze also as recommended. I used a cookie scoop and moistened my fingers, dipping them in sugar before lightly pressing them down on the pan. This kept the dough from sticking to my fingers as it is very sticky. The little bit of sugar didn't hurt the cookies with the glaze on top. My husband will definately want these again.

Brown Sugar Meatloaf
I was a little skeptical about the brown sugar in this as well as the ginger but I love it! I served it with baked beans and a pasta salad. I will definately make this again. Instead of chopping the onion and adding salt and pepper, I used a package of onion soup mix. It worked great!
