Drunken Mussels

I followed the recipe exactly, using Pinot grigio for the wine. And it was a bit less than ok. My guests liked it, though, so it gets 3 stars. Maybe if I used beer?

Slow Cooker Roast Beef

So easy. Low sodium soy sauce is the trick. Use Chip and Dip seasoning (Penzy) in place of onion soup to avoid MSG. Making gravy wth corn sauce and drippings is super easy and delish. Start at 10 a.m., put on low in slow cooker, done at 6:00 p.m. Great for weekend when you are out having fun all day and come home starving but too exhausted to cook. Microwave some peas, butter some bread and dig into the roast. The perfect ending to a great day out.

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Very yummy. Four stars as it takes a fair amount of work, yet isn't fancy for company. I served to good friends and they liked it and didn't mind the messiness. O itted cheese as I didn't have it. Diced mango instead of slices and grilled bread, but not entire sandwich. Had all items on table, allowing guests to make own sandwich and choose how much of each ingredient to include or to eat separately. Next time I might sub a freshly made salsa or brand like Salsa Lisa from the store as the salsa in this recipe is fairly standard and add in the chipotle to get smokiness with less work. I might make this as a chicken salad, dicing up the chicken and grilled veg, to make it easier to eat.

Tomato, Basil, and Feta Salad

Fantastic refreshing salad that is easy and quick to prepare. We took this to our neighbor's house and the French wife and Dutch husband adored it and had thirds. I made it without the cuke as mine had gone off and threw in an extra tomato. I also only put in 2 T olive oil as I was worried about the dressing being too much without cuke. I put in some white onion as I didn't have purple or green on hand. I've gotta make this again!

Strawberry Oatmeal Breakfast Smoothie

This is really a rating on the oatmeal, as I used only soy milk, oats, and mango. I did blend oatmeal until fine, but maybe not fine enough. It still was gritty. I also stuck the soy milk in and blended that next, thinking it would dissolve the oats. Just not a fan.

I messed with the recipe. 1 mango, 1 c. Orange juice, 1/2 c Greek yogurt. Son loves it. I think I might go w half the oj or double the mango so the mango flavor is stronger.

French Silk Chocolate Pie I

Seriously decadent! I followed the recipe exactly, except I made 1.5x the filling. It ended up filling the crust to normal pie depth. However, my dinner guests thought it too rich to eat a regular sized slice (1/8 of pie). Next time I will either cut pie into 16ths or use original filling amount and use whip cream to bring filling to crust height. Or maybe I will make these as little tartlets.

Chef John's Macaroni and Cheese

Everyone loved this, even my picky daughter. I used plain cheddar, not sharp, to make it appealing to kids. I 1.5 times the pasta and cheese sauce, but doubled the topping as everyone likes the crunchy top, and stuck it in a 9 x 12 casserole dish. Yummy!

Kids loved it! Fingers a little fragile and broke some off. I threw them in the punch and kids thought severed fingers were creepy. Punch was "potion" of half ginger ale and half apple juice.
