White Bean Chicken Chili
Great to use up turkey after thanksgiving or Christmas. I've used both fresh tomatillos and jarred salsa verde - good both ways but easier with jar.

Mexican Bean Salad
Christmas 2011. Great dish to bring as side dish. As is, not too spicy. May add some heat.

Winter Fruit Salad with Lemon Poppyseed Dressing
Christmas 2011. Wonderful and easy. Followed directions. Guests asked for recipe. Held up pretty well for second day left overs. I did add some Bibb lettuce as I had it in the fridge.
