Annie's Fruit Salsa and Cinnamon Chips

FAR AND AWAY THE BEST DESSERT RECIPE YET!! Took it to a party the other night and the kids scarfed down all the chips in the blink of an eye. The adults then just took heaping spoonsful of the salsa on their plates!! Every woman there wanted the recipe! WHAT A HIT!!

Banana Banana Bread

Absolutely delicious! Add 1/2 tsp banana oil extract for that extra punch. Didn't last one day in may house!! Will definetely make this one again!

Apple Cake III

Absolutely fantastic! Couldn't believe that there is no other liquid except the apple pie filling. Went back and checked the recipe again. Very moist and everyone loved it!

Blueberry Cream Cheese Pound Cake I

Very delicious cake, however, I agree that the oven should be at 350 degrees. Center was not cooked at 325 degrees after 45 minutes. Increased the time and baked an additonal 12 minutes and it was just fine.

Blueberry Crumb Pie

WOW!! What a pie! My friends and neighbors love it! However, as a diabetic I substituted the 3/4 cup of white sugar with 6 Tbsp. of Splenda Baking Blend and the 2/3 cup of brown sugar with 1/3 cup of Splenda Brown Sugar Blend. It came out wonderful! My neighbor is already asking for another one and said he'll buy the blueberries!

Eclair Cake

Had this at a bridal shower and it was wonderful! However, as a diabetic, I had to change it somewhat for my families consumption. I used SF pudding and SF whipped topping. I also cut down the chcolate amount by melting only a couple of ounces and drizzling it in a diagonal pattern over the top. With small servings this was great for my family!

Simple Country Ribs

O.M.G!! THIS IS THE RIB RECIPE THAT I HAVE BEEN LOOKING FOR FOR 26 YEARS! Prepared exactly as directed. Fell off the bone! All my husband could say over and over was "WOW!"

Harvest Pork Stew

I was leary when I started, but this dish is AWESOME!! As per other reviewers I cooked the pork for 45 minutes for added tenderness Hint: If using fresh butternut squash, wrap it in plastic wrap, jab it with a large meat fork, then nuke it on high for about 5-7 minutes. Let cool a little then cut up. It is much easier to deal with. I also added a few frozen peas at the end just for a little bit more color.

My Special Shrimp Scampi Florentine

Wow! This was exceptional! I varied slightly by adding 1/2 cup of chablis and juice from one lemon. I also thickened slightly with a little cornstarch and water and served it over farfelle pasta. Definetely a keeper!

Baked Scallops

Wonderful! I mixed the warm melted butter with the MINCED garlic and tossed with the scallops before placing in the casserole dish. After baking for 15 minutes I also placed them under the broiler to get a crispier, crunchier topping. Marvelous!

Italian Sausage, Peppers, and Onions

My mom used to make this when I was kid, so when I ran across this recipe I just had to try it. It was everything I expected and more. Don't change a thing. I served mine on "stripped" (took out some of the excess breading inside the roll to make room for more filling) Portuguese rolls and we enjoyed every bite!

Easy Shake and Bake Chicken

WOW!! I made this using chicken thighs and drumsticks, 4 tbsp. margarine (to keep the cholesterol down), added a 1/2 tsp of poultry seasoning and substituted garlic salt for regular. My husband RAVED over it! This has got to be the best baked "fried" chicken I have ever had!
