Dip For The Stars

I love this and it's always a hit. I cut the butter in half and use 8 oz block of feta. I blanche the garlic or it has too much bite. Be sure to drain the pesto and sun dried tomatoes. Pine nuts are expensive so I've never used but I'm sure they're nice.

Chocolate Bourbon Pecan Pie

I've been making a modified version of this for years. Had to tweak it to get it just right for me. If I add the chocolate it's 1/4 cup (and I subtract 1/4 cup sugar). Use dark syrup and swap out a dash of molasses. My pan is deep dish and it is filled up so I'm sure a regular pan would be a tight fit.

Best Marinara Sauce Yet

I love this sauce- even my meat eating friends say it is superior to theirs! I use crushed tomatoes instead of stewed as those have corn syrup in them. This eliminates the need to bust out the food processor as well. I use vermouth as I never have white wine around and add a shredded carrot to help with acidity. I also jack up the garlic and cut the oil in half.

Flash-blasted Broccoli and Feta Pasta

I've been using this for years- thanks! I use 3/4 pkg of pasta and sub 1/2 cup vermouth for the white wine. I sometimes add kalamata or artichokes if I have them and a lot more garlic. the flash blasted broccoli is so good, sometimes I make just a dish of that alone. delish!

Baked Ziti I

Tasty and easy! I like the sour cream change up from time to time. I also like that there is no egg. As a vegetarian I omit the meat but sometimes add zucchini. I also make my own sauce with fresh parsley and rosemary. Great comfort food.

Lemon Orzo Primavera

I wanted this more for a main course so I tripled the veggies (put in half way through) and squeezed half a lemon. Also used fresh parsley rather than thyme as had on hand. Tasty and light.

I think a little lemon zest and juice helps lift this up. I like using the pasta water in sauce. Easy to whip up with whats on hand. and tasty.

Baked Ziti IV

Vegetarian so meat was omitted. Used one 28 oz and one 26 oz jar with 1/2 cup of wine and seasonings added. Can't imagine using less, was perfect amount. Used cottage cheese in the past and was great but needed to use up cream cheese so used 1/2 cup with 1 cup of sour cream. Boyfriend who HATES sour cream loved this. Used 8 oz of provolone and mozzarella as packaged and again, perfect amount. Not too cheesy. Baked covered 20 mins, then uncovered 10. Perfect- Will try fresh rosemary next time! thank you.

Momma's Wine Cake

I used yellow mix and 3 oz pudding with sweet sherry. I also added a sherry glaze on top mixing some wine with powdered sugar and a bit of butter. I think the flavor is better if you let this sit a day or two before devouring.

Speedy Homemade Salsa

Super good! I used diced, fire roasted tomatoes with green chiles from Trader Joe's. I was curious about the vinegar so I divided the salsa and tried lime on one half and apple cider on the other. Definitely preferred the lime.

Suki's Spinach and Feta Pasta

Very good! I subbed a can of artichokes for the mushrooms and used a can of diced tomatoes. Also, added 1/4 cup vermouth and juice of half a lemon. I did see the fancy feta at Trader Joe's but opted for the cheaper, regular stuff and it was just fine. It's 6 oz which was plenty.

Easy Vegetable Pot Pie

Yum, I cooked the bottom crust about 6 minutes and it worked well. I used about 3 cups of fresh veggies and it came out delicious but I was surprised that I could easily fit at least another cup and will do that next time so it's not so bready and possibly double the soup and milk too.

Chili Rellenos Casserole

Pretty tasty. I used egg whites and only the evaporated milk. I took the advice of many and substituted enchilada sauce for the tomato sauce and wish I hadn't. I felt it really competed with the green chile. Next time I'd use green enchilada sauce or stewed tomatoes sauteed with onion and garlic. Tasted better the next day.

Pumpkin Dip

Pretty good but sort of tasted like uncooked pie filling. Next time I'd add more cream cheese (or use less pumpkin). I cut back on the sugar and didn't use OJ. But people loved it.

Quick and Easy Vegetable Curry

Exactly as described- quick and easy! I doubled the sauce and used a 15 oz.can of light coconut milk instead of water. I threw in a fresh bag of veggies and some baked tofu- excellent w/jasmine rice! thanks

The Best Vegetarian Chili in the World

yum, so good! I added a can of tomato sauce and subbed zucchini for the bell pepper. Next time I'll just used crushed tomatoes (crushing 2 lg cans of whole by hand is messy). Regarding all the spicy debate- you're using 3 different kinds of chiles and heat varies widely- just add or adjust according to preference.

Banana Oat Muffins

Baking soda is in ingredients but not in directions. I didn't grind the oats and made super healthy w/wheat flour, applesauce, yogurt and flax seed. Very hearty and tasty- thanks!
