Four Cheese Macaroni

Creamy cheesy goodness! I used a lot more half & half (about double) and some milk, cream cheese and velveeta. I skipped the eggs altogether. This recipe is easy to do, and mixes well with other flavors. I added bacon. My husband opened a can of chilli and added it to his helping (leftovers, the next day)

Old Fashioned Meat Loaf with Tangy Tomato Sauce

This was delicious. So juicy and the sauce was great! I did tweak it a little. I used a half cup of onion and instead of a half cup of the tomato mixture, I used 3 quarter cup.

Szechwan Shrimp

This is really delicious. I went much heavier on the crushed red pepper for more heat. In addition, if you plan to use more veggies than just green onion, do triple the amount of the sauce ingredients. In peanut oil and the garlic (double the amount) I cooked the onions, thin sliced red bell pepper, cubed zucchini for about 4 minutes so they were still crunchy. Then removed from the wok. I added a bit more peanut oil and threw in about a pound of uncooked shrimp. When that was part way cooked, I pushed the shrimp up the sides and added the sauce in and stirred the shrimp back in. Then I added the veggies back in when the shrimp was just about done to coat everything in the sauce. Just delicious. Served over sticky rice.

Curried Peas

Love this recipe. Peas are a big favorite, as are Indian dishes. I used frozen peas and was very careful not to overcook. I like things spicy, so I did add a little more heat, but not so much that I covered the sweetness of the peas.

Fast and Easy Spinach with Shallots

Quick, easy, delicious. I used oil and butter. Butter has such a delicious flavor with veggies! It's hard to go wrong with this one. Next time I might try pearl onions with it.

Spanish Moroccan Fish

Very good! I changed the servings to two for the amounts of fish and veggies but changed the servings to 4 for the amount of spices to use. I also used both kalamata and spanish olives, I also used 1 cup olives. Not being a huge fan of beans, I replaced with broccoli. Spicy, great tasting. The fish just soaks up all that flavor. My husband was very suprised by this dish. He loved it.

Quick and Easy Alfredo Sauce

Wonderfully flavored sauce. Changes I made, I kept adding cheese until I was satisfied with the texture and taste. 6 oz just seemed to thin and milky still. In addition I added a mix of Parmesan an pecorino cheeses.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

So lemony. I did add 1.5 times the amounts, because I have bigger cake pans. I replaced a half cup of milk for lemon juice for a more lemon flavor to the cake. Everyone enjoyed this.
