Curry with Pork and Peppers

It's a good start, but this recipe needs help. Start with the ingredient list: add 1 inch piece of ginger, minced, 2-3 cloves garlic minced, approx. 2 tbs lime juice, OMIT the water, tsp cayenne or add 2 chopped jalapenos. Heat oil, add garlic & ginger cook til fragrant, add pork and veggies. Cook for about 8 minutes (medium heat). Add cream cheese/coconut milk/cayenne/curry paste/lime juice mixture and stir to coat all the meat and veggies. Turn heat to low and cover. Cook until pork is cooked through, about 10-15 more minutes. Add a good handful of chopped cilantro at this point, stir in. This recipe is far too bland as written, but the amount of sauce was right on. Too many times I've made similar dishes and ended up with much to much sauce. The cream cheese gave it a wonderful texture and creamy taste!

Fried Butterflied Shrimp

Lemon Cake with Lemon Filling and Lemon Butter Frosting

So lemony. I did add 1.5 times the amounts, because I have bigger cake pans. I replaced a half cup of milk for lemon juice for a more lemon flavor to the cake. Everyone enjoyed this.

Chicken a la Creme

very nice recipe, but I did alter it. As it is, it's bland for my taste. I cooked the chicken in an olive oil/butter mix and added about half an onion. I seasoned the chicken with salt, pepper, & a tsp of onion powder. I added minced garlic just before I added the heavy cream. To the heavy cream I added about a quarter cup of Romano cheese (you could easily use peccarino or Parmesan cheese)To thicken, I added about a tsp of corn starch. Served over mixed steamed veggies with lots of sauce.

Quick and Easy Alfredo Sauce

Wonderfully flavored sauce. Changes I made, I kept adding cheese until I was satisfied with the texture and taste. 6 oz just seemed to thin and milky still. In addition I added a mix of Parmesan an pecorino cheeses.

Bean, Bacon and Pepper Soup

This is a delicious soup. Changes I made: I added a lot more bacon. This makes a lot of soup, so I used a whole package of bacon. I used less parsley (Italian) than called for, about 1/3 cup. Depending on your taste, you may want to add a bit of salt. The carrots and red bell pepper do add some sweetness.

Szechwan Shrimp

This is really delicious. I went much heavier on the crushed red pepper for more heat. In addition, if you plan to use more veggies than just green onion, do triple the amount of the sauce ingredients. In peanut oil and the garlic (double the amount) I cooked the onions, thin sliced red bell pepper, cubed zucchini for about 4 minutes so they were still crunchy. Then removed from the wok. I added a bit more peanut oil and threw in about a pound of uncooked shrimp. When that was part way cooked, I pushed the shrimp up the sides and added the sauce in and stirred the shrimp back in. Then I added the veggies back in when the shrimp was just about done to coat everything in the sauce. Just delicious. Served over sticky rice.
