Turkey and Quinoa Meatloaf

This meatloaf is great! I'm giving 4/5 stars for the original recipe because I think the hot pepper sauce and black pepper amounts need to be halved- the amount called for overwhelms the other flavors, I think. I'm making this again tonight with half of the amount called for and I expect it to be a 5 star recipe! Make sure to NOT use ground turkey breast- it is too dry. A lean, 93% fat free ground turkey does the trick without sacrificing the health benefits.

Vegetarian Meatloaf with Vegetables

WOW!!! This is excellent!! I made a few minor changes. I used the sausage variety of Gimme Lean, used basil in place of sage, and used ketchup instead of tomato sauce. It came out hearty and delicious! You won't be disappointed with this recipe. I would recommend seasoning and putting butter or oil on the veggies though, instead of just cooking spray. Mine came out very dry...still good, just dry.

Mexican Pasta

This was pretty good. I used only one onion and more like 1/2 cup of salsa with onions and green pepper in it. I also put in more corn, olives, and taco seasoning. I didn't feel like 1 1/2 tablespoons was enough of the seasoning. But it came out tasty and my boyfriend enjoyed it too.

Easy Four Cheese Lasagna

Ok, so I made some adjustments to this recipe. I used ricotta cheese instead of cottage, and instead of mixing it with the spaghetti sauce I spread it on uncooked noodles before laying them in the pan and putting sauce and cheese over them. I made this the night before with uncooked noodles, refrigerated it, and cooked it the next night and it came out PERFECT. I used parmesan and an italian blend of cheese, and one and a half cans of spaghetti sauce, baked it covered with foil for 45 mins, then baked it uncovered for 15 mins. IT.WAS.DELICIOUS. My boyfriend loved it too, and I have leftovers to enjoy later!

Quick Quiche

I REALLY loved this quiche. I lightened it up by using turkey bacon, Egg Beaters, and low-fat mozzarella cheese since I didn't have any Swiss. It was super easy to make and it came out brown and delicious! I used a foil pie plate and 35 mins was just enough time.

Raspberry Truffle Fudge

I used 1/3 cup seedless raspberry preserves and white chocolate for the top layer of this fudge, and milk chocolate chips for the bottom layer. VERY easy to make. I didn't have enough milk chocolate chips so I just chopped up some Hershey's Kisses and threw them in, and it was fine. It took about 3 hours of chilling before my fudge was ready to cut, though. All in all, a very good recipe for the amount of time it takes.

Mexican Lasagna

We really liked this one. I put a layer of sour cream over the first layer of tortillas, and used ground turkey with hot taco seasoning. I used a blend of cheddar/jack cheese. Other reviews are right, you do need more than 1/2 cup cheese!

Quiche Lorraine I

My boyfriend and I really liked this recipe. I used a pre-made pastry crust, 4 eggs, 1 1/4 cups milk, added a large clove of garlic and used turkey bacon rather that regular. I also sauteed the onions and garlic in regular margarine. It came out great!

Baked Dijon Chicken

This was SOOO good! My chicken breast were thick, so it took longer than 20 minutes, but everything else was really quick. I cant believe how moist and juicy the chicken was!!
