Sloppy Joes I

We used to sell "bbq" sandwiches at the food stand at high school ball games. My mom always made them this way, and would always be the first crock emptied!

Too Much Chocolate Cake

LOVE THIS RECIPE!!! I try different cake mixes and pudding mixes too... White with coconut pudding, shaved coconut and coconut milk instead of water was great. Right now I have white with vanilla pudding and fresh blueberries baking in the oven. This cake does not need any frosting... you can't go wrong making this for your family!

Cabbage Roll Casserole

Really good - my teenage son raved about it! I, too, just did it on the stove in a large pot. Used a jar of Ragu instead of just tomato sauce, and added a couple of tablespoons of garlic and italian seasoning. Let simmer on very low heat for about an hour, stirring every 15 mins.

Grilled Bacon Jalapeno Wraps

My husband tore through these! We did them in the oven - baked for about 35 minutes at 350, then hit them with the broiler to crisp up the bacon. Definitely throw in freezer for 20-30 mins first to prevent the cream cheese from leaking out.

Best Spinach Dip Ever

Really good... but of course I must modify. Used dry onion (couldn't find leek) soup. One of the pkgs in the box. Used whole bag (12 oz) of spinach, and whole can (8 oz) of chestnuts. Added extra cup of MAYO. Tasted mighty good! One tip/hint: though the spinach was already chopped, I should have chopped further. Will do it on next batch, which I'm sure will happen tomorrow...

Breakfast Casserole

Fantastic supper! I used a 9x13 baking dish - 8 pieces of toast - ripped into pieces for bottom layer, a full pound of sausage, 1/4 cup of chopped red onion and 1 tbsp minced garlic added to the sausage as it was cooking. 9 eggs, 2 cups of milk and 1 cup shredded cojack cheese. I put the cheese on top, and covered the dish with tin foil as baking at 375 for 40 mins. Removed the foil and let bake another 10 mins. Fried up some tater tots for a side. So good!! It will be added to the repertoire.

Chicken with Stuffing

Easy! Yummy! And, of course, I made adjustments. I have the HUGE crockpot, so I did six chicken breasts. Before I topped with the large can of cream of chicken - I put in a bag of frozen "Normandy Mix" veggies (broccoli, cauliflower, and carrots). I, too, used chicken broth instead of water with the chicken stuffing mix (I used two boxes). No need for salt, and the mixed veggies cooked down to almost unrecognizable - except the carrots. It was almost a surprise when you got the wonderful taste of cauliflower. Husband raved, pre-teens raved, and even the two-year old ate more than five bites. This recipe will make it into the rotation!

Savory Tater Tot Casserole

This is great on any day! I brown the beef first with garlic and onion. While that's browning, I mix the frozen veggies with a can of cream of mushroom, and a can of cream of celery. After draining the grease from the beef, I add it to the soups/veggies and stir all together. I then top with the tater tots, bake until the tots are a bit crispy on top.

Boil these, then pan fry in a tiny bit of oil until sticking slightly to pan (thus - pot stickers!).
