Really Easy Chowder

i followed some previous suggestions - added onion, garlic, and red pepper flakes. i appreciate low fat, but this as written has no fat, and i was missing some, so i added butter. for me that made a big difference. a good, inexpensive and easy recipe!

Indian Chicken Curry (Murgh Kari)

This was very good. I made a few minor changes based on other curries I have made. 1) I "bloomed" the spices in a little hot oil before adding the onions, garlic, and ginger. 2) I cubed the chicken before adding it back to the rest of the recipe. 3) Because I love lemon grass and grow it, I added that with the onions 4) I also added about a teaspoon of sugar to balance the tart flavors, 5) and lastly because i have an abundance of zucchinni in my garden, i added that just before the onions were done - they were a great addition.

My Best Clam Chowder

I made a few small changes. 1)like someone else suggested, i only used clam juice, no water 2) i reduced the butter and half half by a third to cut down on fat, and substituted the rest of the cream with milk. 3) i can not have gluten, so like most recipes that call for a thickner, i substituted cornstarch. 4) and most importantly i added a clove of garlic. after tasting the completed recipe, i felt it still needed something and garlic did the trick. i read many reviews that said bacon was added, but we don't eat bacon, and felt the garlic added that last needed flavor.

Mom's Coleslaw

this is a great basic coleslaw recipe, almost perfect for me though i half the ingredients for the sauce to decrease calories and even reduce the sugar more because i am very sensitive to sweetness in most things. we can't stand miracle whip type products and think mayonnaise always the go to in these type of recipes, (this coming from a house hold that did and still serves MW). i also add celery seeds and pepper.

Vietnamese Fresh Spring Rolls

I used home grown mint in the recipe and did not like the rolls much. So then I left out the mint in remaining rolls and for me, the rolls were so much better. I love basil and cilantro and added lots of both. The first dipping sauce tasted great but I also thought the rolls were much better with a peanut/satay sauce. 5 stars plus without mint and the addition of peanut sauce.

Sauced Fish

I thought this was excellent with salmon! I had one salmon fillet and one cod fillet, both about 8 oz, and so put both in the recipe. My husband and I both preferred the salmon (which was farm raised) to the cod (which was wild caught). In addition, as many suggested, I added some dijon mustard. I also made about 1/3 less sauce than called for - which for us was more than enough. This is an easy and tasty recipe that uses standard ingredients that most have on hand.
