Kettle Corn

I bought a whirleypop popcorn popper just for this recipe. I think I gained 5lbs in a week because I made and ate so much. It has spoiled me, I can't go back to microwave kettle corn.

Easy Morning Glory Muffins

MMMM Made this morning with a few adjustments to make them a little healthier. I used whole wheat flour, substituted 1/2 C oil with 1/2 C applesauce, and only used 1 C sugar. I grated apple without peeling it, added chopped dates, the zest of an orange, and used the juice from the orange to make a thin glaze for the tops after I took them out of the oven. My husband, son, and I loved them.

Raspberry and Almond Shortbread Thumbprints

Yummy. I made these with Smuckers Seedless Strawberry Jam. I used the end of the handle on my wooden spoon to make the indentation. I pushed it in about a half an inch and twirled it to make the hole about the size of a dime. This recipe was very quick and easy to make. Next time I will probably double it.

Barbecued Beef

I use a pork loin instead of beef and it is fabulous!!! I don't drain off the juice, I just chop up the meat and let it cook awhile longer. Just perfect for sandwiches.
