Quick Zesty Green Beans

My favorite part of this recipe is how quick it is to make such a nice side dish! I used olive oil, walnuts, and regular old bay since I had it on hand. It was great! I'm sure with canola, pecans and blackened old bay it would be even better! This will probably become one of my go-to recipes.

Pumpkin Bean Soup

Fantastic! Best soup I've made this fall so far, and I make one every Sunday night. I mostly kept to the recipe, but used frozen corn instead of canned and garnished with yougurt instead of cream. I was able to take a small portion and puree it a little bit more for my 10-month old and he loved it too!

Creamy Italian White Bean Soup

Wonderful! My husband added salt, but I liked it just as it was. I did substitute rainbow chard for the spinach, since that's what we had, and doubled the garlic, just because we always double the garlic in every recipe we do. I even gave some to the baby, and he loved it!

Kale Chips

Fantastic! I used balsamic vinegar, because I thought I had sherry, but when I went to the cabinet-all out! Oh well. It came out so wonderful, anyways. The only thing bad about this recipe is that you have to be careful not to choke, because you will want to INHALE them! yum, I think I'm going to make another batch tomorrow!

Red Chard and Caramelized Onions

Really good! The combination of the lemon, pepper, and salty olives and capers give this dish so much flavor. We used Rainbow Chard, since that's what we had, and it was a beautiful meal. Thanks.

Butternut Squash Bake

Southwestern Rice

Yum! This was a tasty and easy meal. I did a lot of tweaking: I used brown rice, and pinto beans, since that was all we had. I also used a can of sweet corn and a can of mild green chilies and one fresh tomato. I also added 1/2 teaspoon of chili powder since we like it spicy, but we didn't taste it at all. We still added hot sauce to the dish. Next time we will add more chili powder, and maybe even a half teaspoon of salt. We also grated some cheese on top and spoon of nonfat plain yogurt. We will definitely keep this recipe! Thanks.
