Cottage Cheese Roast

With a resident vegetarian, its hard for me to find things that we both like to eat. This is an inexpensive, easy and healthy dish that my husband loves. It is unique and it doesn't taste like meat at all but still good nonetheless.

Crab Quiche

Using canned crab rather than imitation as a few reviewers suggested turned out to be excellent advice. It really did pack more of a punch and had better texture. This is an otherwise excellent recipe.

Spicy Shrimp Fettuccine

The idea of feta, balsamic and spinach with shrimp is an excellent base but living with a pescatarian keeps from using chicken stock and I'm not a fan of spice. I substitute tomato sauce for the broth and leave out the plum tomatoes and skip the peppers. I use frozen spinach since that's what I have on hand and it works just fine. My husband loves it!

Baked Asparagus with Balsamic Butter Sauce

This makes a yummy veggie even more yummy. I wouldn't stop with just asparagus though. This balsamic butter sauce could work with just about anything.

Key West Penne

This is a favorite at our house. We don't always have scallops but it still taste delicious with just shrimp. Often I'll simmer the shrimp and artichokes in white wine. My husband and I enjoy a thicker sauce too so I sprinkle flour into the sauce until it reaches desired consistency.

Sukhothai Pad Thai

Pad Thai is one of my favorite dishes so I'm venturing out with new recipes. My fiance liked this one better than the one I have been using but I would probably cut down on the vinegar or add more sugar. Ours was pretty tangy (which he liked but I didn't so much). I also didn't have so many noodles so my batch had a LOT of sauce. I had to cook it a little longer just to cook out some of the sauce.

Shiitake Scallopine

I'm not an excellent cook but this recipe didn't turn out too well for me. We love shitake mushrooms but this didn't quite cut the mustard for us. Personally, we like our pasta to be a little more saucy.

Pasta Milan

It was pretty good the first time I made it, but a little strong on the Gorgonzola. The second time I added more of everything else and it was excellent. This recipe is quick and simple to make and easy to adjust to your individual taste.
