I am a full time mom. I have three children. A 6 year old, a 4 year old and a 1 year old. They keep me very busy.
My favorite things to cook
I am trying to cook healthy things for my family. I have drastically changed the way we eat. Healthy foods can change your life. I lost 50 lbs. in 5 months, just by changing the way I eat. I love sharing my healthy variations to traditional recipes.
My favorite family cooking traditions
We always host Christmas brunch with our close family. I have been doing this since the first year my husband and I were married.
My cooking triumphs
I made a lemon meringue pie and actually had the meringue turn out the way it is supposed to. I just finished compiling 150 cookbooks for our church with recipes submitted by the congregation.
My cooking tragedies
When I was 12 years old I decided to make chorn chowder without any help. The recipe called for 1/2 cup of celery, not having any, I substituted 1/2 cup of celery seed. No one ate much chowder that night

Peanut Butter Balls III
These are great, but definitely cut back the powdered sugar. They were too crumbly...I would use only 3 cups next time.

Pierogi Casserole
This was very good. I loved the bacon and garlic, but next time I think I will leave out the lasagna noodles and just serve this as a potato dish.

Puffs
These are fabulous. I used cheddar cheese instead of the Monterey jack. I could not fry 4 at a time, 3 of them would burn while I was removing the first 1. (but maybe that's just my ineptness at frying) Make sure you serve these right away, they get soggy (from the grease) when left to sit.
