Apricot-Glazed Pork Chops

This was really good and super easy. I would make a little extra sauce next time. The taste is a little close to McDonald's sweet and sour sauce but better. Kind of funny. My whole family liked it including my 3 year old. I want to try it with chicken thighs next time.

Tater Tot Taco Casserole

This was surprisingly good. We were missing more ingredients than i thought before i started but we made it anyway. It still turned out great. My casserole with just had tater tots, taco seasoned ground beef cooked with diced onion, and shredded cheese. Sprinkle fresh diced tomato (post bake) and a sour cream mixed with taco sauce. It was delicious! We will definitely make again. Maybe next time with more ingredients.

Quick Lemon Dijon Chicken

Really good after I changed it a bit. But after that it was FANTASTIC! We will be making this a lot more. First, (for 4 person serving) I used about 3 tablespoons of Dijon and 3 tablespoons of whole grain Dijon mustard. The same amount of lime and lemon that it call for. About 2-3 tbls of honey. I didn't have creole seasoning so I used about a teaspoon of "Bone Dust" seasoning. Salt and pepper to taste. I added mushrooms to the dish. First browned 1 1/2 shallots and 2 cloves of garlic in olive oil in my Le Creuset dutch oven. Tossed in the mushrooms and let them cook for about 3 minutes. Then I added 2 1/2 lbs of Chicken breast tenders. Poured in the sauce and tossed. Covered with the top and let it cook over the stove for about 10-15 minutes. We served it with the option of mash potatoes or white rice. It was equally good with both. Cauliflower tasted great with the flavors.

Rosemary Biscuits

These were really good. I used a little extra rosemary and they were not bland at all. Bisquick, regular cream cheese (from the freezer) and a little extra rosemary and they were wonderful. i took one of the recommendations and rolled them out a little thicker (approx. 3/4 inch) and then cut them out in circles. They are tall and fluffy. So yummy with some butter. Thanks for the recipe.

Surprise Banana Cake

Mexican Meatloaf II

Best meatloaf I've ever eaten. Great for leftovers. Didn't have spicy crackers/chips so we used garlic croutons. It was great with corn and mash potatoes. We will always make this version when we want meatloaf. Yum!

Honey-Mustard Baked Chicken

We made like the recipe said with chicken. BUT...we had left over shrimp so we butter poached them and then poured the left over sauce over them. It was MUCH better with the shrimp!! It was pretty good with the chicken but from now on, we will be eating this sauce with shrimp! We ate it with mash potatoes but will eat it with rice tomorrow for lunch. I think rice will be better.

Slow Cooker Pulled Pork

Used 2 pounds of pork shoulder. cooked as directed for about 51/2 hours. Then I took out and shredded the pork. Put the root beer jus to the side. I didn't pour it out. Covered the pork in Heinz Honey BBQ sauce, the rest of a Chipotle glaze I had left and a little Worcestershire sauce. I then let it cook for another hour or so. I toasted the buns in the broiler. We paired it with recipe "Restaurant-Style Coleslaw I, By: Marsha" from this site.

Restaurant-Style Coleslaw I

After I started making it I realized that I didn't have all of the ingredients like I though...so I improvised. I used half a head of cabbage (for 4 servings), dried onion flakes instead of fresh, half and half instead of buttermilk, and distilled vinegar instead of white wine vinegar. I made the rest as is and added approx 1/2 teaspoon of dried mustard. It tastes awesome! We are eating it with a pulled pork recipe from this site "Slow Cooker Pulled Pork By: Livie's Mammy."

Quinoa with Chickpeas and Tomatoes

This recipe is amazing. I made it with extra garlic and lots of cilantro instead of the parsley. It was fantastic. In the end, I also threw in some avocado and I will use more tomato next time around. I definitely agree with the other ratings, it gets better as it sits in the refrigerator. Much better cold.

Orange Loaf

This is one of the best "breads/cakes" i've ever made. I made the recipe just as it reads until I got to the glaze. I added about 6-8oz of orange marmalade in a sauce pan first, then added the orange juice and sugar. I let that simmer for about 3 minutes. I can't image the cake any other way. I totally recommend this recipe and I'm debating making another loaf right now.

Sourdough Chipotle Chicken Panini

Made it with a ready made chicken from Costco (or grocery store). Sauce: ranch, a chipotle glaze and ted reader's bone dust. 5 minutes on the panini press was perfect. This was a great sandwich. Very filling!

5-Minute Coleslaw

Used angel hair cabbage cole slaw mix (cabbage only). Used it for pulled pork sandwiches and it was perfect. Doesn't hold at all. No longer than an hour or so. Don't make too much.

Easy Slow Cooker French Dip

Very yummy after a few additions. I made the recipe just as it reads but it needed just a little help. I first rubbed Kitchen Bouquets Browning sauce and Worcestershire sauce. I browned the meat on all sides on the stove. I cooked like normal w/ Newcastle Brown Ale and added garlic salt, sea salt and fresh ground pepper to taste. It was delicious! My husband thinks I'm a genius but all credit should go to lonwolf32. Thanks for sharing the great recipes!

Chewy Chocolate Chip Oatmeal Cookies
