Born and raised in Buffalo, NY and lover of all things edible. I moved to New York City a year ago to pursue an acting career. Being on my own for the first time in my life has made me truly discover a love of cooking. It keeps me (and my hungry room mates) happy.

My favorite family cooking traditions
I grew up in a family where food and meal times were very important. We almost always ate as a family, and our meals, while not fancy or gourmet, were home made nonetheless. I'd have to say Christmas at my grandparents' house would be my favorite tradition, even though I never did the cooking, just the eating. But there was a shmorgasboard on her dining room table that included shrimp and cocktail sauce, bread dip, Swedish meatballs, fondue, home made cookies and chocolates, bacon wrapped olives and water chestnuts, and an array of raw veggies and dip. There isn't another time of year that I leave someplace as full and happy as I do on Christmas day.

Rempel Family Meatloaf
Very flavorful, moist meatloaf. I substituted ground turkey for ground beef, and it still came out great. Not dried out at all. I highly recommend this for a quick, easy dinner.

Thai Peanut Chicken
Overall, not bad, but it definitely needs adjustments. I doubled the sauce, as almost everyone else said, and I might even triple it next time, and also decreased the amount of garlic and ginger. My biggest problem was even with low-sodium soy sauce, it was WAY too salty. I would prefer for the sauce to be sweeter, so I'm going to try to substitute at least 1 TB of the soy sauce for brown sugar and water next time. With a few alterations, this could be a great dish.
