Chile Relleno Casserole

This recipe was very good with the addition of taco seasoning. The real fresh roasted green chilis from the great southwest are a must instead of canned.

Nikki's Steak Saltimbocca

I wasn't crazy about this dish. It needed more flavor, plus I didn't care for the sage..too strong! I will try it again, but with a different grouping of spices and less proscuitto. Thanks for the idea, though!

Cube Steak Parmigiana

I tried this recipe last night and it turned out pretty good. Not enough sauce for our taste..must double or triple if you have it with spaghetti. I have been requested to make this again!

Round Steak Sauerbraten

This was really good, although I did make a few changes: I used my own stock and arrowroot as a thickener for the gravy mix (who knows what chemicals are in gravy mix), chopped onion, 3 tbsp ea red wine and vinegar, 2 tsp of worcestshire and 1 tsp ginger. I also added 3 tbsp of brown sugar, but will cut that back to 1 tbsp of xylitol/molasses as it was a bit too sweet for our liking.

Kerry's Sweet Potato Latkes

This is a great recipe. I used Japanese sweet potatoes, an extra egg and fried in bacon grease-totally awesome. Next time I will experiment with some herbs.

Mark's Cabbage and Hamburger Delight

In an effort to make this a one pot dish, I skipped step one and started with Step 2, adding garlic (garlic goes into everything!) with the onion and added homemade stock, the cream and cabbage last and let it simmer until the cabbage was tender. Using good hungarian paprika is key. I used 1 tbsp hot paprika and 1 tbsp regular. No noodles needed-they are just empty calories and lots of carbs. Topped with some cheese, this dish was excellent! The hubs said to "add it to the list".

Steak Fingers

Finally something different to do with round steak! In order to make it 'paleo', I substitued almond flour for regular flowers and fried'em up in bacon grease. Added garlic and onion powders to the flour mix. YUM! Also pounded the heck out of the meat and they came out tender. Made some aioli for dipping. Hubs says it's a keeper! Thanks!
