Salmon with Brown Sugar Glaze

Reviewed: Jan. 9, 2011
Excellent! My husband and I loved this recipe. Very easy to make. Don't forget to foil your pan since the brown sugar burns on the pan and some of it does run off as cooking.

Asian Pork Tenderloin

Reviewed: Oct. 7, 2010
Excellent! My husband and I really enjoyed this. I enjoyed how easy it was. I didn't want to buy Chili Paste since I don't like spicy and wasn't sure how spicy it would be so I used some Chili Powder instead about 1 teaspoon. I also started late on marinating so it marinated for 6 hours and I used both tenderloins and marinated in a resealable bag. It was plenty of marinade. I did use the leftover marinade, heated it up on the stove and added about a 1/2 T cornstarch to thicken it. I noticed a few reviews mentioned how the marinade burned on the foiled pan, I don't know if you poured all the marinade onto the pork on the pan, I just took the pork out and put on a lined foiled pan sprayed with cooking spray. This worked out fine, the pork didn't stick and the cleanup was easy since I tossed the foil.

I didn't like the flavor of this by itself but once I added bbq sauce it was very good. The pork comes out nice and juicy.

Asparagus, Prosciutto and Fontina Tart

Reviewed: Feb. 9, 2011
Very Good. I wasn't sure if I should cut the aspargus into smaller bites but the full size worked out okay. My asparagus was very thick so if yours are as well cook it a bit longer. The only problem I had was the center of the tart was soggy and the filling didn't stay on the tart well while cutting to eat. The outside edges of the tart was nice and crunchy but I think I will cook a bit longer next time to see if I can get the middle firmer. Or I might mix the mustard with the asparagus then assemble rather than spread the mustard on the tart. I really did enjoy this, flavor was nice and I liked that it was an easy clean up too. My hubby liked this too.

Cinnamon Pork Tenderloin

Reviewed: Jan. 15, 2011
Fantastic. I marinated the pork for 6 hours and it had a nice flavor. I baked it in the oven, foil lined pan 350 for 30 minutes medium rare. My husband liked it and he is not usally a fan of cinnamon. This is a keeper, I like the ease of this recipe.

Basic Fondue

Reviewed: Jun. 25, 2010
Very good. I halved the recipe since it was just for me and my hubby, it was more than plenty. I usually make a white cheese fondue so this was a nice change and easy! Suggestion- if you use flour you are chancing it not being smooth. Sometimes flour clumps or gets gritty. My advice, I got this from all my other fondue recipes and did do it for this one, use cornstarch instead of flour. Use the same amount the same way you use the flour or you may coat the cheese with it and then add it to the liquid. Cornstarch doesn't clump and breaks down better than flour.

Roast Chicken with Thyme and Onions

Reviewed: Sep. 10, 2009
This was very good. The reason I am giving it 4 stars is because I altered the recipe a bit. I did stuff the cavity with lemons ( I cut them in quarters), shallots and onion. I did also stuff some thyme twig and all in the cavity. The changes I made were I chopped shallots, onion, and tore off the thyme leaves and stuffed this under the skin with a few lemon slices. Then I olive oiled the outside and added plenty of garlic and onion powder. During baking I basted. Very flavorful and the shallots and onions under the skin cooked so it was soft and sweet to eat. The lemon slices from the skin I didn't eat.

Italian Subs - Restaurant Style

Reviewed: Oct. 7, 2010
I did enjoy this. I was starving and in a rush to eat this so I didn't marinate the salad. I used sandwich thins for the bread, brushed it with the dressing added the meats and cheese and then toasted it. Then I added the tomatoes and more dressing, I forgot the pickles and purposely left off the the lettuce. I really enjoyed the meats and cheese, feel like the dressing needed a little more flavor. I will make it again and add more season to the dressing, and the pickle.

Rustic Autumn Fruit Tart

Reviewed: Sep. 20, 2010
Fabulous. I used a premade crust and used allspice instead of cardamom. I also sprinkled some sugar on the crust before I added the fruit. I used Orange Marmelade instead of Aprico Jam, I bought the wrong thing, but it was very nice and still gave the tart the shine. Will definately make this again.

Garlic Feta Dip

Reviewed: Jul. 22, 2007
WOW!! I like garlic but I only used the 2 cloves as the recipe calls for and boy that is plenty. I am a Feta lover!! Can eat the stuff all by itself so that is why I made the recipe. I hate to say it but unlike most of the reviews I think next time I will use one garlic clove, I am more into the feta flavor. Very good though! This is already a favorite and I just made it today. I like it to because it's low carb and I eat it with veggies.

Classic Tiramisu

Reviewed: Jan. 3, 2011
This is a great recipe and not very hard to make. I noticed that the recipe calls for 2 (12oz) lady fingers. I think that is an error and it should read 2 (3oz) lady fingers. The lady fingers I use are called Specialty Bakers Lady Fingers and you find them in the bakery section. If you can't find them ask your baker for them. I got them at my local Publix grocery and if they are not out they usually have them in the freezer. These are soft cake like ladyfingers, not crunchy. With that said if you find these ladyfingers, this recipe is on the back of the package. The only other change I will make next time is more coffee liquer. This is a fantastic recipe but I would love more coffee flavor. Also, I used mascarpone cheese that is coffee flavored. I did make this in a springform pan as well.

Excellent and easy. The fish was the only thing I made and I did it just as instructed, minus the rice, and it came out perfect. Served it with asparagus.

BBQ NY Strip

Reviewed: Jul. 18, 2011
This was fantastic and super easy. I didn't change a thing as far as ingredients. However, I saved the marinade and boil it on the stove then let it simmer while the steaks cooked. It's safe to boil marinade and use it as a sauce, which I did and the flavor of the marinade/sauce over the steak was great. Very happy to have found this recipe.

Slow Cooker Apple Crisp

Reviewed: Jan. 31, 2011
I have to admit I made so many mistakes in this recipe. I accidentally added the brown sugar to the apple mixture and was then out of brown sugar for the topping. I used white sugar for the topping. also left out the nuts and added rolled oats instead. This was fantastic, I was so surprised how well it came out in the crockpot.

Asparagus Casserole

Reviewed: Jan. 5, 2011
Wasn't sure if I would like this, but, I really did enjoy it and my husband loved this. It got 4 stars because it is very rich. I did use reduced fat cream cheese and fresh shrimp and fresh asparagus. Next time I will use more shrimp. I didn't add the fried onions but I did sprinkle bread crumbs on it.

Absolutely Amazing Ahi

Reviewed: Feb. 4, 2010
Love, love, love this. I am so happy I found this recipe. It was easy to make and cheap, considering what you pay at a restaurant for this dish. I also like this because it's low carb. I did use low sodium soy sauce but other than that followed the recipe to the T.

Grandma's Corn Bread Dressing

Reviewed: Nov. 26, 2010
This tasted awesome. I used 2 boxes of the Jiffy cornbread mix and double the directions for the box and used a 8x8 pan to cook both boxes together. In the end I only used half of the cooked cornbread to equal 3 cups so not sure if you can just use an 8oz mix instead. Then I did use a 9x13 pan to cook the entire thing and thought it was thin in the end. So again for me if you want a thicker dressing maybe use a smaller pan and cook a bit longer. Other than these things and not sure if I did something wrong, this is a keeper. The flavor is fantastic, it's easy to make.
