Fig and Lemon Chicken

Reviewed: Aug. 17, 2010
I thought the chicken was a bit bland but enjoyed the figs. Not sure if I will try this again.

Grecian Pork Tenderloin

Reviewed: Aug. 17, 2010
This was excellent! Very easy to make, once you juice all the limes. :) I did use fresh limes from my lime tree and used 1 1/4 cup of juice. I marinated for 2 hours but will definately do 5 hours next time for more flavor. Cooked 30 minutes and it came out perfect. This is being added to my 'favorite' folder.

Spicy Honey Mustard Sausage Wraps

Reviewed: Aug. 9, 2010
This is a very easy recipe. However, the only thing I did not like was the inside of the puff pastry was soggy. I cooked them until golden which was 25 minutes. So as a result the puff pastry kept falling off making it messy. I used mild pork sausage and dijon mustard instead.

Cake Balls

Reviewed: Jun. 26, 2010
These didn't work for me. I made red velvet cake with cream cheese frosting and white chocolate. I cooled the cake mixture in the frig before rolling in the chocolate and they fell apart completely in the chocolate. So no luck for me and I am really bummed because these sounded so good. Oh the mixture actually was very tasty, my hubby ate some right out of the bowl.

Basic Fondue

Reviewed: Jun. 25, 2010
Very good. I halved the recipe since it was just for me and my hubby, it was more than plenty. I usually make a white cheese fondue so this was a nice change and easy! Suggestion- if you use flour you are chancing it not being smooth. Sometimes flour clumps or gets gritty. My advice, I got this from all my other fondue recipes and did do it for this one, use cornstarch instead of flour. Use the same amount the same way you use the flour or you may coat the cheese with it and then add it to the liquid. Cornstarch doesn't clump and breaks down better than flour.

Chocolate Bliss Chunk Cookies

Reviewed: Jun. 20, 2010
Good and easy. I used Ghirardelli semi sweet chips since that is what I had on hand. These will be my go to recipe for chocolate chip cookies.

Bahamian Mahi Mahi

Reviewed: Jun. 14, 2010
I didn't like this at all. My husband thought it was so-so. It was flavorless yet had an odd twang, we think it was the oregano. It was easy to make and it did smell very good, other than that not a keeper for me.

Broiled Grouper Parmesan

Reviewed: Jun. 13, 2010
Excellent. My husband and I both loved it. I halved the recipe, also used reduced fat mayo. The fish took twice as long to broil the first round.

Broiled Scallops

Reviewed: Jun. 12, 2010
Good. I did use garlic powder rather than salt, otherwise followed recipe to the T. I love scallops so I feel they can never be bad but I would have liked more flavor. Mine did take a bit longer to broil as well.

Baked Salmon I

Reviewed: Jun. 12, 2010
Excellent and easy. The fish was the only thing I made and I did it just as instructed, minus the rice, and it came out perfect. Served it with asparagus.

Margaritas

Reviewed: May 3, 2010
For the longest time I wouldn't drink tequila until I had a margarita at a friends house. This recipe is great and I really enjoyed it. I know many reviews added OJ to cut the tart/flavor but my friend used 2 frozen strawberries to do the same thing, I did this with this recipe. It does change the color but it was fantastic.

Excellent. I did add extra lime juice and cumin for more flavor. I also used low carb tortillas. I will be making this again!

Sloppy Joes

Reviewed: Apr. 29, 2010
First time I made sloppy joes from scratch. These were very good but I thought they tasted a bit vinegary. My husband disagreed but did say you can smell the vinegar. I think next time I will leave it out since the bbq sauce already has vinegar in it why add more. The only change I made was I used ground chicken meat.

Turkey Gyros

Very good and easy to make. It did lack flavor and I kept adding Greek Seasoning but never got flavorful enough for me. I also think next time I will use greek yogurt for the sauce.

Maple Bacon Pancake

Reviewed: Apr. 27, 2010
My husband enjoyed it and I did too but I didn't love it so I gave it 4 stars. Very easy to make. I found though it was a bit bland. I think next time I will mix some of the bacon in with the mixture and maybe add some seasonings. I did increase the temperature to 375 as many reviews adviced and it did take longer to bake.

Bacon Wrapped Pineapple

These are amazing! Everyone loved them and they went fast. I made everything ahead of time and the sauce thickened up but I think it was great since the sauce covered each piece very well.

Irish Shamrock Cookies

Reviewed: Mar. 16, 2010
I thought these were great and so did the friends and family I made them for. I did add 1 tablespoon of sugar as many recommended. Otherwise they came out great and were easy to make. Did anyone else frost them?? I frosted some and they were good and of course a bit sweeter.
