Boston Brown Bread III

Asparagus, Prosciutto and Fontina Tart

Very Good. I wasn't sure if I should cut the aspargus into smaller bites but the full size worked out okay. My asparagus was very thick so if yours are as well cook it a bit longer. The only problem I had was the center of the tart was soggy and the filling didn't stay on the tart well while cutting to eat. The outside edges of the tart was nice and crunchy but I think I will cook a bit longer next time to see if I can get the middle firmer. Or I might mix the mustard with the asparagus then assemble rather than spread the mustard on the tart. I really did enjoy this, flavor was nice and I liked that it was an easy clean up too. My hubby liked this too.

Lemon Garlic Tilapia

Good, very easy to make. I felt that it tasted like lemon, only lemon. I was a bit shocked when I took my first bite and it was so lemon-y. Tilapia is so flavorless and I felt the garlic and parsley added nothing. My husband liked it more than I did.

Slow Cooker Apple Crisp

I have to admit I made so many mistakes in this recipe. I accidentally added the brown sugar to the apple mixture and was then out of brown sugar for the topping. I used white sugar for the topping. also left out the nuts and added rolled oats instead. This was fantastic, I was so surprised how well it came out in the crockpot.

El Dorado Beef Casserole

Very good and easy. I did enjoy this but felt it was more like a dip and I should be dunking my tortilla's and scooping rather than eating like a casserole. Changes I made were, I used ground chicken, only one can of green chilies and baked chips.

Amazing Whole Wheat Pizza Crust

Very good dough. The only problem I had was when I was rolling it out, it was sticky and when I tried to stretch it using my fist it tore. I blame the humidity but not sure. I ended up rolling it on the oiled baking sheet and gently stretching it out. Will definately make this again.

No Bake Chocolate Oat Bars

Fantastic and quick. I really like these. I made the filling with 1/2 cup semi sweet chocolate and the other half 60% bittersweet and then the peanut butter. I also added a teaspoon of brewed coffee to the filling, coffee compliments the chocolate.

Cinnamon Pork Tenderloin

Fantastic. I marinated the pork for 6 hours and it had a nice flavor. I baked it in the oven, foil lined pan 350 for 30 minutes medium rare. My husband liked it and he is not usally a fan of cinnamon. This is a keeper, I like the ease of this recipe.

Honey Mustard Dressing II

Very good. The taste of the mayo was strong, next time I will add more mustard. Makes a nice thick dressing. I used Grey Poupon Dijon mustard since I like the hearty mustard. This is a great easy quick recipe.

Salmon with Brown Sugar Glaze

Excellent! My husband and I loved this recipe. Very easy to make. Don't forget to foil your pan since the brown sugar burns on the pan and some of it does run off as cooking.

High Protein Peanut Butter Balls

Very good and easy. I halved the recipe since I wasn't sure if I would like them. I did use flax seed meal (ground flax seed) and Designer Whey protein powder. I did think the banana flavor was too much so will halve that next time. They are very good and I will make these often for a before/after workout snack and just as a craving something sweet snack.

Asparagus Casserole

Wasn't sure if I would like this, but, I really did enjoy it and my husband loved this. It got 4 stars because it is very rich. I did use reduced fat cream cheese and fresh shrimp and fresh asparagus. Next time I will use more shrimp. I didn't add the fried onions but I did sprinkle bread crumbs on it.

Classic Tiramisu

This is a great recipe and not very hard to make. I noticed that the recipe calls for 2 (12oz) lady fingers. I think that is an error and it should read 2 (3oz) lady fingers. The lady fingers I use are called Specialty Bakers Lady Fingers and you find them in the bakery section. If you can't find them ask your baker for them. I got them at my local Publix grocery and if they are not out they usually have them in the freezer. These are soft cake like ladyfingers, not crunchy. With that said if you find these ladyfingers, this recipe is on the back of the package. The only other change I will make next time is more coffee liquer. This is a fantastic recipe but I would love more coffee flavor. Also, I used mascarpone cheese that is coffee flavored. I did make this in a springform pan as well.

Fantastic. I omitted the nuts only because I do not care for them in bread. This was easy to make and came out delicious and moist. I also made it in two smaller pans rather than one.

Gnocchi Bake

This is a fantastic easy recipe. I like the idea of buying already made gnocchi rather than taking the time to make them. Not all recipes need to be types where you make every ingredient. This was easy to make and had great flavor. I added some garlic powder and basil to the mixture once all combined. I also made this ahead of when I needed and put in the refrigerator then finished baking. I increased baking time 15 minutes.

Melt - In - Your - Mouth Shortbread

These do melt in the mouth but they are a bit flavorless. I even added vanilla extract, the double strength kind and it didn't give it much flavor. Some cookies I sprinkled colored sugar on top, others I added a mint M&M and some I left plain.
