Chicken Marsala

This was very easy and tasty. I tripled the sauce so we had extras for over mashed potatoes (wuold usually only double because we like a lot of sauce!). Otherwise, the only other thing I changed was to skip the oil--it just didnt seem necessary with all that butter. The sauce reduced nicely on its own. Next time I will add onions.

Spaghetti Carbonara II

I gave this 2 stars because my husband liked it but i was really disappointed. I followed the recipe exactly and the recipe came out bland, greasy and sticky. I even added more olive oil as the recipe suggested. The flavor wasnt bad....there just wasnt ANY flavor at all; despite the bacon and parm cheese it wasnt even salty. I won't be making this again :-\

Broiled Tilapia Parmesan

This recipe is FANTASTIC!! I worried it would be too heavy for such a light fish but it was perfect. I only made one change--I seasoned the fillets with paprika and garlic powder on each side; I was out of Old Bay or I would have used that. Otherwise I followed the recipe exactly and it was melt in your mouth delicious! Even my two year old said "More 'lapia pease!!!" I dont know that I will ever make tilapia another way. I wish I could give it 10 stars!!!!

Crispy Rosemary Chicken and Fries

Delicious. It took about 5 mins to throw together and tasted fabulous. I pretty much tripled the rosemary and oregano and used minced garlic rather than powder. I also only used 1/4 c EVOO and that was probably more than enough...the chicken put off enough oil to baste. I placed under the broiler for about 5 minutes and then YUM!!! The only thing I would do different is add some dried minced onion or top with sliced onions or even bake it with whole onions. Thanks for an awesome recipe. The house smelled fantastic while it was cooking.

San Francisco Sourdough Bread

This was great! I followed the recipe exactly using Esther Nelson's starter recipe and it was fantastic! My bread had a great sourdough taste, texture and crisp crust! I am making more today!!! :)

Sourdough Starter

This starter is very forgiving! I was worried my home wasnt warm enough for fermentation since it is a cold winter here but it did ok! I put it in the oven with the lioght on for 7 days...feeding 1/3 cup water and 1/3 cup flour every day. I used it to make San Francisco Sourdough on this site and it was a hit!!! It had a great sour taste so i am sure it will only get better. I even gave some starter to my mom!! This makes a lot!

Kalamata Pork Tenderloin with Rosemary

I gave this a 4 because my husband thought it was a 5 and I thought it was a 3. It was too salty for me (and I love salt!) and the sauce took forever to reduce. The meat was tender and the flavor was good if you could dial down the salt. I will try it again with a few revisions.

Slow Cooker Beef Stew I

This was great! I made some teeny changes.....I coated the beef in a mixture of flour and season salt, added 3 cloves garlic and a 1/2 cup of red wine and 1 tablespoon of aus jus seasoing. It was so good! My husband said it was the best stew he ever had! Definitely adding to our rotation! Thanks!

Lemon Butter Chicken

This was ok. There must have been an herb in my Italian dressing that was off because this had a strange after-taste and i dont know what it was. It looked very nice on the plate though--I served with wild rice and green beans. I served the leftovers over pasta the next day. I will try this again.

Slow-Cooker Chicken Tortilla Soup

The recipe was delicious!! I made a few changes: 1)Frozen chicken breasts and left out the water--once the chicken defrosts it lets out enough of its own. 2)I added 2 cans of green chilies and waaaaay more cilantro. 3)Left out the cumin (didnt have any) and added a can of rinsed black beans. 4)Used "Chuck wagon Corn" that already had red peppers, onions and green peppers in it but I still added more chopped onion. I also added a pack of ranch dressing mix--this really added some flavor!! I garnished with sour cream and Cheddar cheese and just put a few tortilla chips around the edge of the bowl for dipping/crushing. We all loved this recipe and I can't wait to have the leftovers for lunch. Thanks so much!

Shrimp and Crab Bisque

This was pretty good but I gave it a 4 because I made a few changes. I used all crab meat and used green onion rather than regular. I left out the chicken bouillion, made my roux and then sauted some garlic, the green onions and the crab meat, so the crab could really soak up that flavor. Next I added about half of the 1/2 and half and a TON of paprika--probably 3 Tblsp. Once it began to thicken I added the rest of the half and half and about a cup of sherry instead of wine and 1/2 tsp of white pepper. It was perfect!! Thanks for a yummy recipe!!

Honey Roasted Red Potatoes

These weren't bad--but just average. I used new red potatoes cut in half and dounbled the sauce. Even so, they were kind of bland. I love the idea of them though, and the baked sauce tasted so good in the pan but the potatoes didnt seem to soak it up. Next time I'll try EVOO and add more mustard and honey and maybe some rosemary. I think this could be a good base recipe that just needs some tweaking.

Tilapia with White Wine Caper Sauce

I am not a huge fan of tilapia, but my husband is--he gave this 4 stars. He said the only problem he had was it was a bit salty. I doubled the ingredients for the sauce (capers, garlic, and wine)and added an add'l tablespoon of butter because we like a lot of sauce. I served over white rice and with breaded asparagus. It was quick and easy--will make again!

Mediterranean Pasta

This was really good! The only change I made was to leave out the bacon (didnt feel it needed it) and I marinated the chicken in a oil/greek seasoning marinade overnight. I also added an extra can of tomatoes because we love a lot of sauce and I added extra artichoke, low-fat feta and olives too Yum!! Simple and quick!! Thanks :)

Baked Slow Cooker Chicken

This was delicious!! The only problem I had was that it fell apart when I took it out of the crockpot but that was because I cooked too long--not the recipe's fault! I prepped my chciken the night before with a dry rub of paprika, rosemary and garlic powder. I poked holes underthe skin, slid some butter and also seasoned under there. I let that marinate all night. The next day I added chopped onions, celery, fresh garlic and another pat of butter in the cavity and added to the crockpot with potatoes, onions and carrots. I didnt add any water. Cooked for 10 hours on low. (Next time I would probably only do 8) I took the chicken out and put under the broiler on low for about 5 minutes. Smelled soooo good and tasted even better!! Served with fresh rolls. Deeeelish!!! Thanks for a great recipe :)

End of Summer Vegetable Casserole

This recipe was pretty tasty--I got a ton of compliments. It made a ton too: Enough to feed about 15 people at a picnic. The only change I made was to saute the veggies in minced garlic and I just mixed all the other seasonings in the egg mixture. I gave it 4 stars because I thought it was kind of watery, even if after I drained the excess liquid from the veggies AND patted them dry. Next time I might just try baking the veggies in the casserole instead of sauteing first. Thanks for sharing :)

Uglies

Pretty good for a basic, quick, kid friendly meal. I use fresh garlic cloves-about 2 cloves and reduced the barbecue sauce to about 1 one cup. I had a lot of meat left over so I just froze it for next time. They tasted even better the next day! Thanks for sharing! **Update 8/10- I have made many variations of these including pizza uglies, taco uglies and greek uglies (ground turkey, basil, greek dressing and feta). Yummy!

Easy Pizza Sauce III

This was pretty good for being so easy :) I made a few changes....added 1/2 teaspoon of sugar, 2 tablespoons of pizza seasoning instead of the oregano and added about 1 tsp of minced garlic. It was delicious and made enough to freeze for my next pizza night. Thanks for sharing!

Slow Cooker Chicken and Dumplings

I have made this recipe so many times and can't believe I forgot to review it!! I always use 2 cans cream of chicken and 1 can cream of celery. I also add chopped celery, chopped carrots and peas. I leave out the butter and add 1 cup low sodium chicken broth. I usualy add some minced garlic too just because I add garlic to everything! I add one of the packages of raw biscuit dough one hour before serving and cook the other biscuit package as usual--my husband likes to serve this over biscuits but I like the "dumpling style". Delicious and fun to experiment with! I have also made it without biscuits and added potatoes instead. It is in regular rotation in our house spring, summer, fall and winter!!

Garlic Cheese Chicken Rollups

This was fantastic. Once I pounded the chicken breast, the pieces were pretty big so I only used 2 breats and cut them in half (enough to feed my family of 3). I made my own cream cheese mix with a tablespoon of fresh chopped onion, 4 tsp of minced garlic, and some fresh chives and parsley into 8oz of cream cheese. I slathered this on the chicken breast, rolled and toothpicked and then dipped in butter and breaded. It was delicious!!! I will make it again and again!!
